06:05We're making white chocolate truffles with caraway and plum apricot jam and sugar cookie crumbs.
06:12The recipe was actually my grandma's truffle recipe that we kind of built off of.

09:59It's a sphere.
10:00So removing that thin shell out of a mold is absolutely nerve-wracking.

10:37To make sure the judges don't see the connection where we joined it, I have to spend a little
10:42bit more time with the candy melts to make sure I spread it evenly to hide the seams.

13:08We made deck the hall chocolate truffle ornaments.
13:11We wanted to infuse the colors of the east and the west,
13:14which is the red, the gold, and the green,
13:17blending with Chinese culture with the holiday season.
13:19This is a lovely ornament.
13:22I love that mix of east meets west,
13:24the red being very good luck.
13:26Good luck, good fortune.
13:28Lovely.
13:28The only thing I would point out,
13:30it looks like you used a faceted mold.
13:32I would have loved to see more of that texture.
13:35It's a little bit covered up from the candy melts
13:37that you used in between the seam.
13:40But it looks like a real ornament.
13:42You've got the gorgeous wreath,
13:44the detail on these little bows.
13:46I thought that was a really nice touch.

13:52So we chose to do dark chocolate ganache truffle
13:55with a chocolate pistachio streusel
13:57and cranberry sauce.
13:59So it has like a holiday element.
14:05This is delicious.
14:07I'm a big fan when there's acidity
14:09that's been added to chocolate,
14:11just to brighten it up,
14:12give it pops of flavor
14:14to kind of combat that richness.
14:15And it was also a textural masterpiece.
14:18The ganache is perfectly set,
14:19it's not grainy,
14:21and a beautiful amount of that crunchy pistachio goodness.
14:24And I think you have a perfect balance
14:26between the components.

14:42We really wanted to tie it into something
14:44that's really close to our hearts, the nutcracker.
14:46The design on the chocolate that you have
14:49just underneath the tree, it looks fantastic.
14:51So well done there.
14:52But the belt around the ornament
14:55could have just been a little bit tighter.
14:56You used real chocolate on the exterior,
14:58which is very finicky.
15:00Perhaps if it was tempered,
15:02it would have held its shape a little bit better.

15:04Which is why we see it's caving in a little bit at the top.
15:07But when you peer inside,
15:08you see that beautiful Christmas tree
15:10with ornaments on it,
15:12which is very sort of meta and referencing itself.
15:15So I applaud you for that.

15:19it is time to get cracking.

15:43And then there's this underlying note of tartness
15:47because you have that apricot and plum,
15:49the sugar plum that runs through there.
15:51And I dig it.
15:53I was trying to get the individual flavors,
15:56but it's quite complex.

16:34We really wanted to get an icy, snowy kind of feel
16:37with lots of glitter and white
16:39and kind of a swirly blue and white pattern.
16:41We were inspired by your sparkles.
16:43I absolutely love the uniformity, the details on the top.
16:48This minimal design is amazing, but it would have been nice to see
16:52maybe one other design element.
16:55But you absolutely nailed taking two halves of your ornament mold
16:59and sealing them together in a way that's seamless.
17:02And it just so happens to match my outfit, so...
17:05Got to give you another point for that.
17:08It's definitely giving sparkle an ice, but does it taste nice?
17:11So our inside is white chocolate ganache

17:47because, of course, white chocolate is very, very sweet.

17:50But it's a lovely combination of flavors.
17:54I do wish I'd put more salt in there,
17:56because it does help.

33:56Our mailbox is called Gnome Sweet Gnome.
33:59We wanted to do something whimsical.
34:01So we made a little gnome cottage in the woods mailbox.
34:05It's so charming.
34:06Adding that gorgeous texture to the sides.
34:09And then on top of that, you've added this sort of white wash.
34:13It almost looks like it's been in the woods forever.
34:15It's just layer upon layer of beautiful details.
34:18And it's giving me life.
34:22On the bottom here, that little stack of logs.
34:24You used cinnamon sticks.
34:26Genius.
34:27The wreath on the front, beautiful.
34:28You guys have done a great job.

34:34So we made this little Santa gnome cookie.
34:35And we wanted to put a little cookie inside Santa's tummy.
34:41Because he's been eating a lot of cookies lately.
34:43So there is a little cookie sprinkle inside.
34:46My goodness.
34:47It is the cutest shape possible.
34:50Beautiful piping work.
34:51This royal icing.
34:52It's just the perfect consistency.
34:54And then let's talk about the isomalt.
34:56I mean, crystal clear.
34:57You can see my hand right through there.
35:00And there's a baby gingerbread inside.
35:02It just doesn't get any cuter.
35:05It's cute.
35:05But the real question is, does it shake?

35:16It's a coconut lime gingerbread with coconut lime royal icing.
35:21It has all the traditional spices in a regular gingerbread,
35:23plus the coconut and lime flavored.
35:27It's a lovely cookie.
35:29So the classic gingerbread flavors come first.
35:33And then the coconut sort of comes as a wave afterwards.
35:38And then lastly, just the faintest hints of lime.
35:41But it's a little too subtle, those flavors.
35:44May I ask, you put lime into the cookie using some zest?
35:49Is that correct?
35:49Lime zest in the gingerbread.
35:51Sometimes with zest, it's so moist after it's been zested
35:54that it doesn't evenly mix throughout the dough.
35:57It's tasty, it's good, it's delicious.

36:13So this is cookies for Santa gingerbread mailbox.
36:16We wanted to get that traditional wooden mailbox that Santa would have kept millions of years.
36:22It's so old.
36:23And we want to show a little bit more skill in that all the flowers are hand-made and hand
36:28-piped.
36:29It really sells that sort of antique-y look.
36:32I love that you use an impression mat to create an actual wood grain texture.
36:39Your greenery along the sides.
36:41It's so nicely piped.
36:43I almost think I can smell pine from here.
36:46And then you've accented that with piped flowers.
36:49It's so charming.
36:51I love all the detail that you have on the trees.
36:54I love that snow.
36:55I was watching you work the snow to make it peak so it actually looks like it's a real scene.
37:01But I would have liked to see a little bit more design just on the side or even anything.
37:06With that being said, overall, great job.

37:15Shaker cookies filled with chocolate chip cookies that we hand-made inside the shaker
37:19so that it looks like they ate chocolate chip cookies.

37:23The fact that you put teeny tiny chocolate chip cookies with the most minuscule chocolate chips in there is so
37:29gosh darn cute.
37:31The only thing is I can see some bubbles in the isomalt that perhaps could have been popped with a
37:38very quick torching.
37:39And that would have added to the clarity.
37:41I can actually almost see both of you through the cookie.
37:47I have to, of course, do the shaker test.

37:59So we went with an espresso orange gingerbread flavor.
38:03We just wanted something more punchy, like a citrus.

38:16The orange is really well done.
38:18I thought that was really bright and lovely and fresh.
38:20I could taste espresso.
38:21It was a little bit bitter.
38:23That took a little bit away from some of the other warm spice notes on the orange.
38:28But it's a lovely cookie.
38:29I would be very happy to have this at a holiday party.
38:33It's nicely baked.
38:35It's got a really nice chew to it.
38:36The orange flavor came through.

38:51It is the North Pole Sweet Shop, Santa's little factory, where he makes all the sweets for the holiday.
38:59We decorated it with all different types of candy.
39:02We have a shoot with the little coated candy coming out of the factory.
39:07And then down below, there's Santa.
39:09And in the back, there are naughty little elves that are having a little snowball fight.
39:13This is really whimsical.
39:15The presentation is busy, but it's intentionally busy.

39:18But it doesn't really look like a mailbox.
39:20It looks like a couple of really awesomely made gingerbread houses.
39:24I think what you've delivered here is my childhood dream gingerbread.
39:29One of the things I noticed right away are your beautiful conveyor belts that go between the buildings.
39:35Making straight walls is hard enough out of gingerbread.
39:39You've curved them into this sort of concave shape.
39:44It really just looks like those starlight mints are traveling from one building to another.
39:48It's so cute.
39:50And the shaker cookie.
39:51Lots of fun.
39:52There are snowflake sprinkles inside of it and a little peppermint swirl.
