03:25And that's kind of like how our story started.
03:28From that one encounter, we now have our own business together.

03:53Now, the bakers are tasked with creating edible cookie dough characters.
03:57So, I have to ask, April, what makes the cookie dough edible?
04:01What you want to do in this case is make sure that there are no raw components in that dough
04:07that could make you sick.
04:08So, in the case of flour, you want to make sure to put it in an oven at 350 for
04:12at least five minutes.
04:13And we're not going to use any binders like eggs.
04:16You can use a lot of other things.
04:17So, mom and dad were right.
04:18No licking spatulas, kids.

13:28So we created our spicy brown foxes, because they're brown on the inside, and that's where
13:33it counts.
13:35And they are brown because we decided to do a play on gingerbread.
13:40First impression, I love how you've used your woodland scene here, and then you've added
13:45this little pop of color with the orange.
13:47It was an unexpected color choice, and I think it works really, really well with this scene.
13:52Just a really nice design.
13:54I think it's super creative.
13:55I can't wait to try it.

14:25The additional candied ginger really was a stroke of genius.

21:01I am going to start by making our cake batter because we really need to get that in the oven
21:06pretty fast in order for this whole challenge to work out.
21:12The cake itself is a spekel-ass spice cake.
21:15With an apricot brandy glaze and a cardamom white chocolate ganache.
21:20Well, sometimes we measure.
21:22Sometimes we sprinkle.
21:24Spekel-ass is a very Dutch cookie.
21:27And the flavor profile is all the Christmas spices you can think of.
21:30The cinnamons, the nutmegs, the allspice.
21:32All right, go on in the oven.
21:35Helena is going to be starting on the Swiss meringue buttercream.
21:38We'll be mixing together the sugar and the egg whites, whisking that over some heat to get that to temperature.
21:45And then putting it into the mixer to beat up to stiff peaks and then adding the butter.
21:49After that, she's making the white chocolate ganache.
21:53If we are not precise in who is doing what and when, we are not going to make it.
21:58Time management is going to be crucial with only three hours.
