00:00All right, so I'm going to show you how to turn this into ground beef to make some of the best burgers you've ever had.
00:04And we're actually going to test it out against some store-bought ground beef to see how big of a difference it makes when you grind your own.
00:09Now, don't get me wrong, I have nothing against store-bought ground beef.
00:11I mean, I use it for my videos all the time.
00:12And I'm sure a lot of you have noticed that brisket's gone way up in price recently,
00:15but I still got this for $4.98 a pound, and it's going to make a ground beef that's so much better than anything you can buy in the store.
00:20And because we're turning this into ground beef, we're really not going to do much trimming.
00:23We're just going to cut it into smaller pieces so we can put it into the meat grinder.
00:26You're going to want to aim for about 1-inch cubes.
00:27That's going to make it the easiest to grind and get you the most consistent result.
00:31Now, we're going to run all the beef through on a larger grind first.
00:33And because we're going to double grind it, we're going to switch it over to a little bit of a smaller grind for the second pass.
00:38And as you can see, after we got through grinding all 14 pounds of that brisket, we're left with the perfect ground beef for smash burgers.
00:44And when you compare it to the ground beef we got from the grocery store, this is just much more vibrant.
00:47I mean, the stuff from the store is good. It's going to taste fine, but it just has that little bit of a dull color to it.
00:53Now, you can definitely see a difference here when it comes to the color,
00:55but you can also see a big difference when it comes to the distribution of fat.
00:59Now, people ask me about this griddle that I use on my cooktop all the time.
01:02And it's one that actually came with my Samsung cooktop when I bought it a few years ago.
01:05Now, you don't have to use something like this, but you want to make sure that you're using cast iron.
01:08It's going to give you the best crust when you're making a smash burger.
01:11And I always tell people you can use whatever seasoning you want, but Lawry's Season Salt is almost always my go-to.
01:16And I know a lot of people grind up chuck when they're making ground beef, but that's going to usually land you a little closer to 80-20.
01:20That's why I love grinding up brisket. When you grind up a whole untrimmed brisket, you usually land pretty close to 75-25.
01:26And after we let that cheese melt for just a few minutes, we're going to stack these up so we can put this burger together.
01:30Now, because we're doing a comparison video, I always recommend that you keep the toppings simple.
01:34That way you can really taste the beef.
01:35And my go-to for this kind of test is using a steamed potato bun, a little bit of diced onion, some dill pickles, and yellow mustard.
01:40And that's it. You don't want to use anything else.
01:42All right, so first up is the brisket burger, and this is how I prefer to make my grime beef, so I already know this is going to be amazing, but let's give it a try.

01:55I mean, the crust and flavor you get on this when you use ground brisket is out of this world.
01:59Now, I've tried just about every kind of ground beef out there, and you just can't beat the texture and flavor you get from using ground brisket.
02:03I mean, it's not even close.
02:05And even though we already know this is going to be the better burger, it's only fair that we put it up against the store-bought ground beef so we can really test and compare apples to apples.
02:11And if you've watched a bunch of my videos, this is the exact ground beef that I buy whenever I don't grind it myself or pick it up from the butcher.
02:17And just like the last burger, we're going to use Lowry's Season Salt to keep it consistent.
02:22And of course, two more slices of American cheese go down, and we're going to give that just a few seconds to melt.
02:27All right, after that cheese melts, it's time to stack these up so we can put this one together as well.
02:31Now for the store-bought ground beef, we're going to do the same exact thing we did for the first burger.
02:35And that's a little yellow mustard, some diced onion, a few dill pickles, and all on top of a steamed potato bun.
02:39And right off the bat, you can tell the crust we get on this is absolutely insane, but it's definitely not as juicy.
02:45But either way, let's give it a taste test and see how it compares.

02:52Now don't get me wrong, this is a really good burger, but even with minimal toppings, you just don't taste the beef as much as you do with the ground brisket.
02:57And even though this is nowhere near as good as the brisket burger, it's still better than most burgers you're going to get at a restaurant.
03:01And you don't have to take my word for it, you can go to your local butcher shop and find any kind of ground beef that they're serving,
03:06and it's going to be much better than the beef you find at your local grocery store.
03:09So even if you don't have a grinder at home, you can test this out for yourself, and trust me, you're going to notice a difference.
