00:00Hello, everyone. I'm Chef Bobette Davis, and I'm so excited to be here with you at the
00:12Wellness House. And I am going to share my wonderful peanut butter caramel dessert with
00:20you today. So first of all, I want you to understand that we're going to be using today
00:27cashew nuts and everybody's favorite peanut butter. Everybody loves peanut butter. And
00:35you can actually use for the way that we're going to build this dessert, you can actually use
00:42granola, but I made some oatmeal raisin cookies. So I'm going to use the oatmeal raisin cookies as my
00:50basically sort of like my cake. Okay. So first of all, we're going to start off with a non-dairy
00:57milk. I have chosen almond milk. Now, I'm just going to go ahead and pour all this. I went ahead
01:05and did four cups of milk. This would give you a whole bunch. You'd be able to feed the neighborhood
01:12with what I'm about to share with you today. And I've got four cups of soaked cashews. Now,
01:20it's very important that you soak your nuts because nuts have enzyme inhibitors and they're
01:30hard to digest if you don't soak the nut. So we've soaked this cashew for a while. It looks like I got
01:35a hair too much milk in here. So I'm going to pour a little bit of this milk out because I really want
01:41you, I want you to know how to make this properly. And I am making such a mess. Lord. All right. So
01:49I've got a little coconut oil, which is about a quarter of a cup of melted coconut oil. And this
01:56is our peanut butter. So we're going to put a little peanut butter on this. Actually, this is a half cup
02:03of peanut butter. Yeah. Half cup of peanut butter. And I use agave nectar. Now I use agave nectar because
02:18it's low on the glycemic index. It was the syrup that we decided to use in our restaurant stuff. I
02:25eat in Englewood. Shameless plug. But yeah, so we're going to use agave nectar in this. And with this
02:32particular recipe, you're probably going to need about a cup and a cup and a half of agave syrup. So
02:39I'm going to put all that in there. And I've got cinnamon, about a teaspoon of cinnamon. And a teaspoon
02:50of sea salt. Now what we would actually do is blend all of this up. And this would be
03:02our sauce. This is our sauce. This is our sauce after we blend all of this up. I'm not going to
03:07make that noise right now. Oh, the main ingredient. I have a little bit of cooked yams. I have about a
03:15cup of cooked yams. They can be cooked. You dump that in there too. There we go. Cooked yams.
03:30And when we blend it up, we're going to come out with this little creamy sauce here. And this is how
03:41we're going to build our parfait. So basically, I've got these oatmeal raisin cookies that I have
03:50made. But you can buy yourself a bag of granola, your favorite granola. I would start off like I'm
03:56going to do here. Crumble my cookie. Now, if you have bananas, any kind of fruit, any fruit you might
04:06want to throw in here. But remember, it's peanut butter. I would use bananas. Bananas are absolutely
04:12perfect. So we're going to pour just a little bit of our sauce on top of this.
04:17And if you've got some fruit, you can cut it up and that would be your next layer.
04:28Now, I have taken agave nectar, yams, peanut butter, and a little sea salt. And I made a caramel.
04:41Agave nectar, agave nectar, yams, peanut butter, and sea salt. You blend it up. You've got a caramel.
04:49Check this out. See that? A beautiful caramel layer. There you go. So we're going to put some more
05:01cookies in this. My recipe is so simple. Like, it really is this simple. And of course, if you had
05:13bananas, you cut some more bananas up on that. And then you take and put a little bit more
05:18of our blended parfait mix. Wow. And then you're going to top this off with the caramel.
05:34Look at that.
05:35Ah!
05:40And I'm going to crumble the cookies on top. Yeah. There you go. Now, the exciting
05:48thing about this dessert is that if you have little molds, you know, the little molds that
05:53you build, your little desserts in, you take a mold and you layer it very similar to the
05:59way that I've, I've layered this parfait, this parfait cup. Then after you get it completely
06:06layered, you put it in the freezer. And trust me, this mix right here tastes just like ice
06:15cream after it's frozen. That's what you got. A frozen ice cream-like dessert. So you can either
06:22have a parfait or you can freeze it and you've got ice cream. I'm brilliant. I know.
06:32But I call this a protein-packed dessert. You've got peanut butters. You've got cashews. You're not
06:40eating any dairy. There's nothing in here. There's no refined sugar, no dyes, no preservatives. You just
06:47got a nice, clean, yummy dessert. Now, remember, you really do want to put you some fruit in here.
06:55Bananas would probably be my suggestion that you go ahead and put bananas in there. And just remember
07:01that when you're, when you're, um, like, like I live a vegan lifestyle. So I, I make sure that
07:10everything that I do is going to give me some nutrients. That's important to me. And especially
07:16because of my age, I'll be 70 years old in December and I still got to keep it moving. I'm not old.
07:23Even though Google says I'm an early elderly. No, I know. So nutrition is key as far as I'm
07:34concerned. So when I'm making desserts or anything like that at the restaurant or anything that I make,
07:40we're constantly thinking about nutrients. We don't do, um, we're not big on deep frying,
07:47um, that sort of thing. We're not into that kind of stuff. So we try to just keep things
07:52um, like I said, get the nutrients out of it, minimal cooking, because you know, whenever you're
07:59cooking food, whenever you're putting heat on food, you kill the live enzymes in it. So
08:05live food is best, best because we need the enzymes is how we feed ourselves. Um, and if all you eat is
08:12cooked food, I want to rethink that and think about, like I said, this is a live dessert. The only thing
08:20that's cooked in it. Oh, two things cooked in it, the cookies and the, um, and the yams. But what if
08:29you decided to use something else? You could always layer this with a nut mixture, another nut. You could
08:35take, you could take walnuts and raisins and, and put, put them in the food processor using the, the,
08:42uh, pulsing, uh, effect on that food processor with the S blade and, and just chop that up in there
08:48and make that your crust. So it's just ways of getting around, um, you know, just constantly,
08:56constantly killing your food before you eat it. So I felt like this was a simple dessert. It's,
09:02you know, caramel is good and you know, peanut butter mixed up is good. And I just figured you
09:07guys would actually love this. Um, I hope you do. Should I eat some, make you just make your mouth
09:14water a little bit? Let me see how this is. Just take a little bit. Oh my gosh. Yeah. It's the
09:26bananas. That's all you need in this is bananas. So once again, we're thinking about nutrition.
09:36That's your main goal. So as much as you can not cook, don't cook. I've got a book. It's called

10:36this dessert. And do me a favor, freeze it. So you turn it into ice cream, share it with the kids,
10:44the husband that's stubborn and don't like nothing. Make sure you share it with him. All right. So
