03:35Because most of the conversations that I'm having with my friends and my family, they're
03:40all about food.
03:42So today we have celebrity chef, my girl, all the way from live from Memphis to Tennessee,
03:50Miss Gina Neely.

04:02We need your advice on how to cook at home stuck in the house.
04:09You know what, it's just been a crazy time, even for people who are normally, you know,
04:15chefs and love to cook.
04:16How can we create things out to the store all the time?
04:20So today, and thank you for inviting me to do this, because I feel like it's so essential
04:25that we get this information out.
04:27Today, I wanted to create something where we bring the kids into the kitchen.
04:31You know, because we're always thinking about us standing in the kitchen.

04:45So what I thought I would do, I was trying to think, how can I bring Southern comfort to
04:50your home from my home?
04:52So I thought about what is the most suffering food that we all grew up on?
04:56We all know it makes us feel fully warm and awesome inside.
05:00And that was the chicken pie pie.
05:03My favorite, by the way, my favorite.
05:06So I'm excited.
05:07I'm going to go get all of the ingredients.
05:09I can't wait to watch you do this.
05:11This is so easy.
05:13You're going to be like, oh my God, why didn't I think of this before?

05:20So first off, like I only bought five biscuits because I'm a onesie.

06:48And that is what we're trying to do.

06:54Now, do you put, do you put anything at the bottom first like an oil or anything or
07:00do you put it in there without anything?
07:03Well, if you don't have a non-stick pan, I would suggest spraying it with something
07:07so it can slide out easier.
07:09But most, mostly now everything is non-stick.
07:12You don't have to really worry about that.

07:14Even if you don't, go ahead and get you some Pam or something like that or a vegetable oil
07:18and just spray them up in tins if you were making a cupcake.

07:24So you're going to put that in, but you want to take your biscuit and brush it with a little
07:29olive oil.
07:30Olive oil just helps it brown evenly, kind of adds moisture into it.
07:34So you take your little brush and you just rub it around the edges.
07:37This is so easy and crazy.
07:39Y'all are going to be kicking my butt.
07:41You know what I'm saying?

07:43So now, like a rotisserie chicken, chicken breast, slice it up in just little chunks.
07:51And then you just take a little spoon and you spoon the chicken in the bottom of the biscuit.

07:57So don't fill it up.
08:00Add in more veggies and veggies are better.

08:04That looks yummy already, Gina.
08:07I'm telling you, it's crazy.
08:09Now it's like just your plushable steamers.
08:11Like I love broccoli, cauliflower, and carrots, but do peas or whatever you love in your belly.

08:19Follow the directions on the packet.
08:21Put it in a bowl.
08:22But let me tell you, you know, we so folk.
08:24We like a little spices in ours.
08:26I did add in a little pepper season stock because I like to mix it up a little bit.
08:31And I also put in just a little bit of chicken broth.
08:36Now here's the key.
08:38You always want to cook with broth as opposed to water because broth will always add more
08:43flavor to your food.
08:44Anything.
08:45Just a little bit.
08:46Not a lot.
08:47Because we don't want it too much.
08:48And just take your spoon and kind of stir it around.

08:55Can I add a little sugar in there?
08:58Why would you want to add a little sugar in your veggies, sweetheart?

09:04My sister and I, we add a little sugar to everything because we like everything just a little bit

09:34Spoon it out and make sure it goes inside the little hole.

09:46And then of course we know that what binds everything together?

10:14So all you have to do, this is it.
10:16That is your preparation.
10:18That is your preparation less than 10 minutes.
10:21You're going to put this in the oven at 350 degrees for 15 minutes until it browns evenly.
10:27And then you let them sit and then this in result.

11:21you need to have in your diet, just mix it up and change it up a little bit and taste
11:25it as you go.
11:26I know people are like, can you give me a recipe for that?
11:28But oftentimes I can't because I'm just working off the top of my head, you know?

11:36It just makes it a lot easier.
11:39But since we've been kind of stuck in the home a little bit and we have to kind of create
11:44our own energies and our space to sort of reflect happiness or what we feel where we want
11:49to go, I have these.
11:51You know, you go to the bar and they have the nuts at the bar.
11:54I made my own little bar.
11:55I love it.
11:56Tell me the mixture.
11:57Let me tell you, all you do is add in two tablespoons of butter or if you want more,
12:04depending on how many nuts.
12:05I did four tablespoons, just a little light brown sugar and then take your nuts and then
12:11you put it in and just sprinkle it around.
12:13But now I created this nut rub.
12:15So you have to buy that from me.
12:16Sorry, but that's just the way it is.
12:18So I love it.
12:19And where can we get it?
12:20It's so funny.
12:21I have I literally have friends texting me asking me what kind of nuts are in your nut
12:30mixture.
12:31Like what kind of nuts do you use?
12:33I use pecans, peanuts, walnuts, almonds for sure, pistachios, every nut because the
12:42walnut is the king of the nut.
12:43It has the most antioxidants in it and it boils our system very well.
12:47So we want to do things that are going to be very beneficial for us.
12:50And this is sort of the nut rub that I created by being at home.
12:54And I got it, you know, bottled up already.
12:56And then I also eat a lot of popcorn.
12:58Like when I'm like having my own movie theater.
13:00See, my own movie night.
13:02I created a popcorn rub.
13:03Gina, I eat popcorn every single night.
13:08Let me tell you about this, girl.
13:11This smoky grill popcorn flavor would give your popcorn like a smoky grill flavor.

14:13It's like a pot pie is like a cool thing that's really different.
14:17That's not something that we're all like cooking every day.

14:22And the great thing about it, look at the portion size.
14:25So you're not even getting a lot of bread.

14:28We're not able to move like we normally move.
14:30So we got to slow that thing down.
14:32I just noticed myself the other day, I was having a glass of wine and I said,
14:36OK, sis, we've been in quarantine, what, 15 days?
14:38So you've had 15 glasses of wine.
14:40So we need to take a fall back and have some water.
14:42Have some water.
14:43Have some water, baby.
14:44Yeah, look.
14:45I'm having my water now.
14:47See?
14:48And let me tell you, one little trick, you guys, that I found worked for me,
14:53when you wake up first thing in the morning, boil you some tea water, pour your water,
14:58add in honey, lemon, an orange, anything citrusy, and just drink that first.
15:04That keeps everything moving through because we don't want anything to get stuck in our throats
15:09that will, you know, pump our lungs and all of that.
15:11So you want to keep things open, breathing.
15:14Breathing it in.
15:15Breathe in good air and wipe your spaces down.
15:18Wash your hands.
15:19Wash your hands.
15:20Mind your mind.
15:21Eat your veggies and dance and smile and put music.

15:42So what foods boost your immune system was the question.
15:51So foods, and I would have to say foods that quickly boost their immune system are peppers.
15:56And that's why Friday night I use chicken fajitas because when you have a green, yellow, orange,
16:01whatever peppers, or you use any kind of peppers in your meal, that's a great quick.
16:06Garlic.
16:07Garlic is awesome in everything.
16:10I want to say also cayenne pepper, believe it or not.
16:15Put cayenne.
16:16You know what?
16:17You can sprinkle a little cayenne pepper on this pot pie.
16:20I just thought about that.
16:21Just to kind of add a little kick to it.
16:23You know what?
16:24And that'll take your sweetness out.
16:26So it'll give you another flavor on that sweet one.
16:28I don't know.
16:29I'm going to add a little sugar and a little cayenne pepper.

16:33And you just have a little sweet heat.
16:35Broccoli is another good veggie.
16:37Broccoli and your leafy vegetables.
16:39Anything like that.
16:40Anything that's colorful.
16:42That's green kale.
16:44Those things will boost your immune system and keep it in a healthy way.
16:47And also take a probiotic every day just to keep things moving.
16:51Keep them flourishing.
16:52Because we're so stagnant now.
16:53We need to keep finding ways to keep ourselves moving along.

17:02So how do you, this is like a question that I actually ask myself sometimes.
17:07And I talk about this a lot.
17:09What do you clean food?
17:12Like when you go food shopping, how do you clean your food when you bring it home?
17:18Like what would you recommend for that?
17:21So lately, and this is not a normal thing.
17:23We all know that.
17:24So lately, I shop in my gloves.
17:26I take everything out in my gloves, all my veggies.
17:29I put them in the sink like a warm soapy water and take my veggie brush and just kind of brush everything down.
17:35I know that's going to seem like a lot of work.
17:37It just, you know, right now we just don't know a lot of things and we just have to be careful.
17:42Like I take my shoes off at the door.
17:44So even before I do that, I get out of my clothes, take a quick shower and I change it to something that's going to be,
17:49because I wipe my space down all the time.
17:51So I don't want to contaminate it again.
17:53So when I start taking my groceries out, that's what I do.
17:56I keep my gloves on, wash my veggies, take them out of the original packaging.
18:00Sometimes I put them in Ziploc bags, things like that.
18:03Just very small, minimal things.
18:05What about vinegar?
18:06Like back in the day, my great grandmother, she would like clean all of the vegetables with vinegar and water.
18:14Like that's something that I find myself doing with like everything.
18:19My apples, my oranges, my salads, water with a little vinegar in it.
18:26But just the tint.
18:28And I'm telling you, Cedric, think about it.
18:30Look how much we're going back to those old remedies that our grandfathers and our ancestors did when they were cooking.

18:36How relevant is that now?
18:37Yeah.
18:38And I'm telling you in so many of those things really work.
18:41And you see how long they left.
18:43You know what I mean?
18:44They're out living us with those tricks.
18:46Yeah.

18:48So I salute it all the time.

18:53How much food should a person really stock in their home?
19:02Like what is your recommendation of stocking food and the types of food to stock in this situation?
19:09Yeah, that's a really good question because I do feel like we don't have any answers to how long this is going to last.
19:17Let's just be clear.
19:18But thank God the grocery store isn't essential.
19:21So we can go back and forth.
19:22But I usually try to do, I'm not really big on canned foods because they hold a lot of sodium.
19:27So, and I don't want the extra sauce.
19:29So I'm big on frozen vegetables as opposed to canned vegetables.
19:33And I will stock up on some of those, stock up on meats, like things that you can make extra meals with.
19:39So maybe in place of getting like four chicken wings, four chicken thighs or something, get a bigger pack and break it down.
19:45So maybe you can do some fajitas one night.
19:47You can do the chicken pot pie.
19:49You can just have chicken and a side of kale.
19:51You know, so how can we stretch these meals by cooking them one time and putting them in the freezer?
19:56So, or just the refrigerator.
19:58So don't feel like you just need to take out enough to cook for one day.
20:01Go ahead and cook some spaghetti.
20:03Cook out some things that you can keep repeating.
20:05So in place of that spaghetti one night, you may do it with veggies.
20:08Or the next night, you may just do it with a garlic toast if you want to change it up a little bit.
20:12But just things like that.
20:14Like for me on Sundays, I may boil five eggs.
20:17So I know if nothing else, I wake up in the morning in a funky mood and I'm not really feeling being in this kitchen.
20:22I get my coffee going and I eat a boiled egg because now you're getting protein into your body.
20:27And it don't spoil.
20:28And if you want to make tuna on a whoop, you got eggs already ready.
20:32You see what I'm saying?
20:33Being prepared and being ready.
20:35I do.
20:36Don't sit on G and wait on O.
20:40Be ready to go and get ready.

21:25So, with that being said, you can have some dark chocolate almonds.
21:30And try to have dark chocolate, because dark chocolate is better for your system.
21:34And it's better in height and antioxidants.
21:37And try to do it in dark chocolate almonds.
21:39But if you must have something sweet, and I'm not going to lie, I had a donut the other day.
21:43My body just said, listen, if I don't get my donut, we're going to all fall out on the floor.
21:47And you want that sis?
21:48I said, no, I don't, donut.
21:50So let's have a donut.
21:51But I did cut it in half.
21:53So the other half of the donut is waiting for another meltdown.
21:57So just basically in moderation, because you can't sit at home and just eat.
22:01But I tell you, I really, really do love gelato versus ice cream.
22:06Gelato is a little lighter.
22:07It's very good.
22:08When I was in Italy, I swear to God, I didn't feel like I gained a pound.
22:11I ate gelato every day.
22:12So I've been on a new gelato kit.

22:15And that's nice and cool and sweet.

23:50And I literally the other day, I made a huge pot of collard greens and kale and I froze
23:57like little containers.
23:59I must have like three containers in my freezer to pull out.
24:04That is like my favorite go-to as well.

24:10And it's healthy.
24:11It's very healthy.
24:12And a little thing to give it just a little more kick to kick up that immune system is
24:16to add in some red pepper flakes.

25:54It's like the least we can do is to stay home and to just ease up on them a little bit.
26:00And, you know, and I want to just say, yeah.

26:04And I want to say, I had a friend who hit me up the other day and was just like, you know, we need to take care of our healthcare workers.
26:12They're all working like crazy hours.
26:15There's no place for them to get food.
26:17So I just want to say to the people who are watching the day, if there is a local restaurant or a local food bank or something like that, that's delivering food to their, to our healthcare workers, like let's support them.
26:31I know in Harlem, we have national action network who has been very, very supportive when it comes to feeding the homeless, feeding our healthcare workers.
26:41And I just think that that's an important message for, you know, people to kind of take in, like, let's do what we can.
26:48Let's just do what we can.
26:49I mean, and if you're out someone, you know, someone is next door to you as elderly, just swing over and just say, do you need anything?
26:56I'm headed out to the store because we don't want them out because their immune systems are not as strong as ours.
27:01So take into consideration that try not to hoard so much food, leave enough for other people who, you know, who don't have the capacity, the capacity to get out every day like you do.
27:11And you know what, and just take a moment each morning and sit in the moment of gratitude.
