00:07Seed, those shallots, the garlic, starting to caramelize.
00:10So we're going to add a little bit of capers.

00:17We've got to get a new dinner menu.
00:18We can hire more cooks. We get more help around here.
00:20Okay, we're going to add a little bit of white wine.
00:23Let that reduce.
00:24And then you've got hot stock.
00:27Let that deglaze the bottom of the pan.
00:29Okay, that's looking good. You can turn the heat off now.
00:31And we're going to monte, or we're going to whisky in about two tablespoons of butter.
00:38You see it's starting to get kind of glossy.
00:40That's that sauce that's starting to happen.
00:41I'm going to do a little bit of pepper, salt, squeeze of lemon, parsley.
00:48Now we're going to spoon it out nice and easy.
