00:00I know kitchen or restaurant is very stressful because it's fast-filled, loud, and then the stress never really gets away.
00:22And for me, it's more about balancing it. So I always tell my staff that good food comes from a place of joy.
00:33And if you're not enjoying what you're doing, even in the middle of chaos, it will show on the plate.
00:40And I've been in those kind of environment before, sobrang stressful, sigawan.
00:46So, honestly, I don't want that kind of kitchen. I'm more calm in the kitchen.
00:53And maybe planning and organizing different parts of the business, that's where the chaos comes in.
01:01Kitchen more, talaga. Alam ko na, parang, alam ko na kung paano ako mapipiko.
01:06So, nama-manage ko na siya.
