With a sweet and saucy apricot glaze, these oven-roasted Cornish hens are an affordable and easy-to-make holiday dinner. In this video, Nicole makes an 80’s throwback recipe for apricot glazed Cornish hens! Best enjoyed over a bed of wild rice, these cooked birds are cheaper than a whole chicken and just as delicious.

00:00Taking it back to the 80s with my mom's favorite holiday dinner, apricot glazed cornichens.
00:04Starts out with a few unusual suspects.
00:06Make your glaze. It's a cup of French dressing, a cup of apricot preserves, and a packet of onion soup mix.
00:11Cornichens are easy to cook, and they're super affordable, and this is a great alternative to turkey if you're looking for one.
00:16And I like to tuck the wings back and then place them in a casserole dish.
00:19A little sprinkle of salt and pepper, and then pour on the glaze. All over.
00:22This is enough glaze for six cornichens, but I'm only making four today.
00:25Into the oven, 400 degrees. About an hour.
00:27Trust me when I tell you this is about to be delicious, and that down there is liquid gold.
00:31There's only one way to serve this up, because this is how my mom did every year.
00:35Wild rice and green beans.
00:37The rice is going to soak up that juice.
00:39Oh my god.
00:41So tender.
00:42A little swim in the sauce.
00:44A little rice.
00:44This is the perfect bite of my childhood Christmas.
00:48Mmm.
00:48Perfect.
00:49Just like mom used to make.
