00:00Have you ever spotted one of these freezers in an Indian restaurant?
00:04Inside, you'll find all kinds of kulfi, the beloved Indian ice cream.
00:15What started as a humble family business eight years ago
00:19is today Malaysia's first and only musti and halal certified kulfi maker.
00:25Mum's Kulfi now serves its creamy treats in establishments all across the country.
00:32At the heart of Mum's Kulfi is the 40-year-old recipe belonging to Rahul Dhir Bhutani's mother, 67-year-old Sunita Bhutani.
00:42Mum's Kulfi started with the old couple going to a restaurant for lunch, having a fight,
00:47and then her trying to make it up to him by making her old-school kulfi ice cream.
00:52When my dad had it, Mum and Dad, when my dad had the ice cream, he's like,
00:56you know, you should make this and sell this in the market.
00:58Nobody has kulfi's in the restaurants over here, we don't know why.
01:01And she took it to heart and she went ahead with the first flavor, which I was just mentioning, almond.
01:07And no sticker, no branding, just in a plastic cup.
01:10Went to the first banana leaf behind the house, which was, if we can mention it,
01:14it's Achakari House, our first customer, who are now in SS2.
01:17But prior to SS2, they used to be in Bukit Gassing, which is where we are from.
01:22And they were our first supporters, Mum's first supporters.
01:24And they said, of course, Auntie, gave her full respect, gave her full love,
01:28and started buying, and it has moved from there.
01:30So that actually happened in 2016.
01:33As one of the pioneer kulfi makers in the country,
01:36they moved from a home kitchen to a proper operating facility during the pandemic.
01:41And from traditional flavors like almond, pistachio, mango, and saffron,
01:47they expanded to include pandan gula melaka, salted caramel, Oreo Hershey, and more.
01:54We gave it a try, and it's absolutely delicious.
01:58So creamy.
02:00But what makes kulfi unique?
02:02So unlike a gelato, which is whipped to incorporate air,
02:07to make it light and creamy,
02:09a kulfi is just stirred constantly
02:11to not have any presence of air,
02:13so it becomes dense and thick.
02:16A litmus test for kulfi, you can cut it with a knife,
02:20whereas a gelato or a regular dairy ice cream can be scooped.
02:25A kulfi ice cream cannot be scooped,
02:26because you'll break the scooper,
02:28but the thing won't break because it's so dense,
02:30zero water and zero air.
02:32Always innovating, Rahul claims they are the first in the world
02:35to serve kulfi in a kalipo-style tube.
02:39For a more traditional experience,
02:41customers can also enjoy them in these matka pots,
02:44which help keep them cold.
02:46Mums' kulfi can be found in numerous restaurants,
02:48including Bayleaf Kitchen,
02:51Kanna Curry House,
02:52Anjapur,
02:53India Gate,
02:54Sarawana Bhavan,
02:55and Kare Kudi in Penang.
02:56And this was a strategic choice.
02:59There are a lot of people like ourselves,
03:00mom and pop stores,
03:01which open up restaurants or open up cafes
03:03or open up ice cream parlors or open up dessert spaces,
03:06and all the eggs go into one basket,
03:08and they're limited within that confines
03:10on how to bring people in.
03:12Whereas we felt that, you know,
03:14the Indian market in this industry is humongous,
03:17but very humble,
03:18very humble,
03:19because the minute you see an ice cream wrapping somewhere
03:21lying on the side of a bridge,
03:22you feel bad that they didn't throw in the garbage,
03:24but then you feel like,
03:25yes,
03:26it's good to see an ice cream wrapping finished.
