00:00Lemoncello might seem like a bit of a project, but it's only three ingredients plus a little
00:03bit of time, and it's super easy to make. We are using simple syrup as a sweetener for this
00:07lemoncello, and we're making a one-to-one simple syrup with two cups granulated sugar and two cups
00:12water, cooking that over medium heat until it simmers. While a simple syrup cools, it's time
00:16to peel a lot of lemons. I'm peeling about like 15 to 18. Since we're using the lemon peels,
00:22it's really important to give the lemons a good wash before peeling. I'm gonna take all my lemon
00:27peels. It feels like overkill, but you really want to get a lot of lemon peels in here, so you have a
00:32full-flavored lemoncello. To my jar, I'm gonna add equal parts of vodka and my cool simple syrup. The
00:39vodka and the simple syrup are gonna extract all the flavor and oils. I'm gonna place this in a cool,
00:45dry place for one week, and then it'll be ready to drink. Time to check in with Desk Cello. It smells
00:51so good. It smells like lemon peels. It's a little bit sweet. So floral. The color is like really
00:58beautiful. Wow. That is so good. It's balanced. It's not too sweet. There's a little bitterness.
01:05The lemon really comes through after just one week. It's pretty incredible. Yes. Yes to this. This was
01:11way easier than I thought it was gonna be, so everyone should try making lemoncello. Cheers.
