00:00It's day six of soups that are basically salads, the series where I show you soup recipes that are
00:04packed with vegetables. In other words, basically a salad. My name is Megan. I'm a registered
00:08dietitian. This is a broccoli gnocchi soup with pureed vegetable broth. Let's make it. Saute
00:13onions, shallot, and carrots. You want these veggies soft because they're going to go in
00:16the blender. Season with rosemary and thyme along with some vegetable broth before you put it in
00:21the blender. You could also use an immersion blender, but I wanted the broth to be really
00:24thin and smooth, and sometimes the immersion blender leaves some chunks. Grate some parmesan
00:28cheese and add your heavy cream along with two sage leaves. This is the best part. I'm adding
00:33mini gnocchi. They're so cute and perfectly bite-sized. Lastly, chop and add the broccoli.
00:38This has the taste and texture of broccoli cheddar soup. I'm a firm believer that the best part of a
00:43salad is the dressing, and in the same way, the best part of a soup is the broth. This broth is
00:47cheesy, creamy, so delicious, and secretly packed with vegetables, so this is a great recipe if you
00:52don't like vegetables or if you have kids that don't like vegetables and you're looking for ways
