recipe adapted from @Taylor Chace 🏼
1. boil a pot of water and cook 1/2 lb ditalini pasta according to package instructions, strain and set aside
2. heat 1 tbsp of oil from the sundried tomato jar (or regular olive oil) in a dutch oven or pot over high heat
3. add 1 diced yellow onion and sautΓ© for 2 mins, then add 1/4 cup white wine, 3 chopped large carrots, 3 chopped celery stalks, and 1 small chopped parsnip
4. add a pinch of salt and sautΓ© for 5-8 mins until vegetables are softened
5. create a space in the pan and add 1 tbsp butter and 8 minced garlic cloves, and stir for 1-2 mins
6. add 6 tbsp tomato paste, mix together for another 1-2 mins and then stir in 1/4 cup chopped sundried tomatoes, 6 tsp chicken bouillon, and 6 cups water
7. add 1/2 tsp parsley, 1/2 tsp oregano, 1/2 tsp basil, 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp red pepper flakes and bring to a boil
8. reduce to a simmer, cover and let cook for 10 mins
9. add 3/4 cup light cream and stir in cooked pasta, 1.5 cups chopped chicken, 1/4 cup fresh chopped parsley, 1/4 cup fresh chopped basil, and 1/4 cup grated parmesan cheese
10. serve with a drizzle of olive oil and fresh parmesan, and enjoy!

00:00Day 14 of soups that are basically salads is Mary Me Chicken Noodle Soup. This recipe is from
00:04Taylor Chase. It looked so good I had to make it. First saute the onions in sun-dried tomato oil and
00:09then add some white wine, carrots, celery, and parsnip, which I had a little trouble finding in
00:14the grocery store because they don't often cook with it, but it was great in this recipe. The
00:17broth in this soup is seriously so good and you can really taste the sun-dried tomatoes. Then I'm
00:22adding dittolini pasta, some chicken, parmesan cheese, basil, and parsley. This soup has all
00:27the things, tons of vegetables, fresh herbs, protein, and flavor. I ate this every day for lunch this
00:32week and literally didn't get bored of it and will probably make it again next week. The full
