Originally from the Mon community,

Khao Shae was made as an offering to the monks during the Songkran festival.

As the Mon people migrated to Thailand, they brought Khao Shae with them

and over time it evolved into a dish enjoyed by the Thai royal court.

In the royal court, Khao Shae was refined,

washed, rinsed, soaked in scented water and served with delicious side dishes

like fried shrimp paste balls, sweet radish and crispy shallots.

Today, Khao Shae is enjoyed by everyone, from the royal court to state food stalls.
