00:00I like to take it kind of easy after Christmas, but I still like to give a New Year's Day
00:04brunch for all my friends.
00:06It's an omelette brunch, and it's inexpensive, it's very easy to put together, and I can
00:11make use of a lot of things that are still here in my house after Christmas.
00:16This omelette party is really delicious, everyone enjoys it, and I'd like to show you how.
00:21This little desk, I used it as a drink buffet, and on it we have our plates.
00:27These are nice large plates, they'll be perfect for the omelettes, they're a generous size.
00:33These plates are for the dessert, and these napkins, this is a wonderful monogram, I don't
00:38even know what the letters are, I found these at a tag sale once, and I use them every single
00:43holiday, and inside is a fork and a knife.
00:47This little table has to be here because of the chandelier, and I also can display the
00:51dessert.
00:53For dessert today, I've made poached pears.
00:56These are excellent because pears are so good at this time of year, and peeled and
01:00poached in a red wine syrup, they are so good.
01:04I used Bosque pears, which have these long stems, and also Comise pears, which are very
01:09tender and buttery.
01:11To go with the pears, I've made some star cookies.
01:14They're just my basic sugar cookie recipe with some chopped candied ginger added.
01:21Another thing that worked out really well this Christmas was that all my amaryllis bloomed
01:26in unison.
01:27Well, my guests are about to arrive, and I'd like to show you the omelette table.
01:30It's right over here.
01:32This is the omelette buffet.
01:35As you can see, there's lots of things on this table, but they're all very simple and
01:39very easily prepared in advance.
01:41Starting from the very simplest thing, the eggs.
01:44I figure three eggs per person, and here we have asparagus that have been lightly blanched,
01:51four different kinds of cheeses that have been grated, roasted red pepper strips.
01:56This is malasal beluga, and this is the caviar that comes from the salmon, the salmon roe.
02:03To finish off the buffet, beautiful mixed green salad, and these baby croissants.
02:12You know, Susan, it's so easy to make a good omelette.
02:14You'll need a heavy pan, clarified butter, and the freshest eggs.
02:19Three eggs, okay?
02:20Squiggle the pan.
02:21I call this sort of squiggling, pulling the edges towards the center, always moving the
02:27pan so that the omelette never has a chance to stick to the bottom of the pan.
02:32Now, this omelette I'm going to make, you want caviar and sour cream.
02:36Well, I'll use the savoury caviar.
02:39This is so gorgeous, fresh.
02:41This is the salmon roe, and that looks so good right there, and now fold over one side
02:48and don't overcook.
02:50Turn it out on the plate like that.
02:52Looks good.
02:53All I have to do, because everything has been done in advance, is cook the omelettes and
02:58have conversation with my friends and have a good time.
03:01Try it.
03:02I think you'll really enjoy this kind of party.
03:04Well, it doesn't matter how old you are, because if you're reveling in the new year, well,
03:08you have to have a delicious drink, and it doesn't have to be champagne.
03:12Here are some of our favorites.
03:13For the kids, try our apple cranberry sparkler.
03:17And to make that drink even more special, just wet the rim of a glass with some fresh
03:24lime juice, and if you have some beautiful red sugar leftover from your cookie making,
03:32just dip the rim of the glass in that sugar.
03:35Isn't that a beautiful rim?
03:39Sanding sugar like that just brightens up.
03:41You can use red or white or any color, really, for this.
03:48So let these dry and make it nice and crystally.
03:52Sanding sugar, really perfect edge for a glass.
03:56And for the garnish, well, how about a little umbrella.
04:01These little umbrellas are so cute.
04:03There.
04:04And then maybe a piece of apple with red skin, of course.
04:11And how about a few cranberries.
04:13Again, remember, this drink is cranberry and apple juice, sparkling non-alcoholic cider.
04:24So here we have our cute little cocktail drink enhancer.
04:32And then half and half, cranberry juice, sparkling cider.
04:36They're going to love it.
04:40And for the adults, we're going to make Snake Bites, traditional British drink that combines
04:45hard cider and ale.
04:47Half and half.
04:49Lots of drinks made with beer really have odd names.
04:52There's Black and Tan, equal parts of Guinness Stout and Bass Ale, and we're using Fuller's
04:59Ale.
05:00Yummy.
05:01And then there's Shandy Gaffs, that's lager and 7-Up or lager and ginger ale.
05:06And there's Boilermakers, made with whiskey and beer mixed together.
05:10How does that sound to you?
05:11Here we have four drinks.
05:13Couldn't be easier.
05:16They're lots of fun and they are festive.
05:18Happy New Year.
05:19It's amazing what you can do with some white paper, a glistening pom-pom, and an elastic
05:24chin strap.
05:26Cut a half a circle of paper, just glue it together with some double-stick tape and a
05:31paper punch.
05:33Any design you choose.
05:34Aren't those the cutest little New Year's Eve hats you've ever seen?
05:38These should be put right on the table.
05:41And our buffet table is ready.
05:43I'm just putting the last few things on here.
05:46I want all my guests to wear hats because I think they're going to look really cute.
05:50And we have something that everybody's going to love, these really loud noisemakers.
05:57These are great.
05:59And what do you think of the table?
06:01Our glasses rimmed in red sugar, wonderful open-faced and panini sandwiches that are
06:06just divine.
06:08And crudités, spicy popcorn snack, wonderful brownies, beer, drinks for the kids.
06:16And with these, well, you're going to want to have a lot of fun.
06:21Thanks so much for watching.
