00:00Because of the abundance of mud crabs in the Philippines,
00:06no matter where you are in the province,
00:09there are always specialties of mud crabs.
00:13And this is my entry that I usually use
00:18when I'm doing a trade test in restaurants
00:22that I apply for.
00:24This is my favorite mud crab.
00:27Let's make crab cakes.
00:33As you can see, it's still alive.
00:35I'm so happy.
00:46So more or less after 10 minutes,
00:48we can remove this.
00:57So once we've removed the meat,
01:06we can now mix the other ingredients.
01:09So we have here our chopped onions.
01:11Let's also add the boiled sweet potatoes.
01:17And then Dijon mustard.
01:19A bit of pepper.
01:22And then let's season it with salt.
01:25We'll just mash the sweet potatoes.
01:29Because we added the water from the steamed mud crabs,
01:33you can see that our mixture is very wet.
01:37What we can do after adding in our mayonnaise,
01:41we can add breadcrumbs.
01:54And for color and additional flavors,
01:58I'll just add chopped beets.
02:06So this is the consistency of the mixture that we're looking for.
02:09And it's better if you rest this or chill it for at least 30 minutes
02:14before you form it.
02:16Let's just dredge it into flour.
02:19Then to the egg.
02:25We can now deep fry it.
02:44For our sauce,
02:45basically we just seasoned it with mayonnaise and Dijon mustard.
02:49Let's just add some pickle relish.
