00:13We want to introduce you to one of our favorite appetizers, it's a salmon trucha from Zitácuaro.
00:18It has creme fraiche and chabacano and chipotle jam.
00:23Then we want to share with you the pastrami sandwich made at home with a jalapeño kimchi and wild mustard.
00:31For the strong dishes, we want to recommend our roasted chicken.
00:35We make a brine for 15 days, then we brown it in the refrigerator for at least 2 days.
00:41To finish, we make a direct roasting.
00:44We serve it with cauliflower puree, some scallop mushrooms and a little salad of the day.
00:50For dessert, we also have one of our favorites, the Basque tart with mamey ice cream and cocoa crumble.
