As concerns mount following a World Health Organization report indicating consumption of processed and red meat causes cancer, Bolivian officials are promoting llama as an alternative due to its low fat content. Long consumed by the country's indigenous communities, llama meat is experiencing a surge in popularity, including in high-end restaurants. Bolivia has even begun exporting llama meat to Europe.
