00:07But still, I will always choose this flavor combo first.

00:13During winter, bringing home a bag full of amla every week is mandatory in my house.
00:20And of course we can never finish eating them before the next bag arrives.
00:25So every week a new bag comes in and some amlas end up rotting.
00:31Last year I finally found a solution.
00:35A traditional Kerala style amla pickle that stay fresh for one whole month.
00:41And this year I am making it again.
00:44All you need is amla, red chili, salt and water.
00:49That's it.
00:50Usually, Keralian soak the amla in salt water for few hours and then boil everything together.
00:58But you know me, I always do things a little different.
01:03After soaking, I simply put the amla and chili straight into the grinder.
01:10No boiling.
01:11Then I add salt, a little black pepper and grind it into a smooth, spicy, tangy paste.
01:20Traditional Kerala pickle does not make a paste or slices.
01:26They keep the amla and chili whole in water.
01:30For my version, quick, smooth and super easy.
01:33Once the paste is ready, store it in a glass jar and your winter special amla pickle is done.
01:42Enjoy this salt, spicy, shower magic throughout the entire winter.
