00:04Today we're going to be showing you how to make Shrimp Pad Thai.

00:34Like I said, we're making Shrimp Pad Thai
00:37so let's drop down here and see what our ingredients are for this.
00:40We've got 8 ounces of Pad Thai noodles, 2 tablespoons of fish sauce,
00:441 tablespoon of brown sugar, 1 large jalapeno sliced,
00:48the juice of 1 lime, 1 quarter cup of olive oil that we're going to divide,
00:522 shallots minced, 2 cloves of garlic minced,
00:551 pound of peeled and deveined medium sized shrimp,
00:582 eggs, 3 green onions that have been sliced.
01:02Let's head over to our stove and start making this Pad Thai.
01:06Alright, we've got everything over here by the stove.
01:08We've got our mise en place ready to go.
01:10Shrimp, all the aromatics, the oil, the eggs, utensils to stir,
01:14and our noodles in the back there.
01:16Let's go ahead and focus on our pan and we'll commence cooking.
01:20And we have the sauce too. You want to make your sauce.
01:23I forgot to add this in there.
01:25You've got your brown sugar, your lime juice, and your fish sauce.
01:30You want to just combine those three together, mix it up real good,
01:33have it ready, go ahead and place it right on into your mise en place,
01:36and you're good to go.
01:38Got our wok on about a medium, medium-high heat.
01:41We're going to add half the oil.
01:44Let that get hot.
01:46Alright, we've got our shallot.
01:48It's fizzling in there so we know the oil's hot now.
01:51Go ahead and throw the aromatics in here, garlic and the shallots.
01:58And I'm going to throw the peppers in there too.
02:03And we're going to stir this up.
02:11You want to just do these up until you start smelling everything cooking,
02:16about two minutes.
02:22Alright, let's add our shrimp.
02:24Right on in there.
02:28Kind of separate them out so they cook.
02:32Get one side cooked.
02:34And we'll flip them over.
02:36And we'll stir fry them.
02:39Alright, we got some color on these yet?
02:42No, we do not.
02:44Just going to flip them over.
02:46They're starting to cook on one side.
02:48They're still a little bit frozen too, so
02:50make sure your shrimp are not frozen.
02:54You just want to cook them until they curl up nice
02:57and they get a little pink or orange color to them.
02:59So, that's what we're doing here.
03:07Alright, we got some level of color on there going now.
03:10Go ahead and add half of our green onions in there.
03:21I'm going to move the shrimp over a little bit to the side there.
03:25We're going to put our egg in here and scramble that up and let it cook.
03:42This adds texture to the dish and also some more flavor.
03:50Let that cook.
03:54Throw the rest of the green onions right in that egg.
04:00Stir that in.
04:05Alright, the eggs are getting pretty set, so I'm going to continue to mix everything together now.
04:14I'm telling you, this smells really, really good.
04:17Put the rest of our oil in there.
04:20Our sauce that we made up with that brown sugar.
04:25Fish sauce and our lime juice.
04:35Stir that all up.
04:41We've got our Pad Thai noodles that we've got here.
04:44You can buy these already made like I have.
04:46They're already cooked.
04:47All you've got to do is add them in to the dish or you can get them, you know, like spaghetti noodles and you can cook them yourself.
04:55But just be sure to follow the package directions.
04:58I'm going to break these all up.
05:01Set them right in there.
05:04Turn the heat down just a touch.
05:06I'm going to stir all these in.
05:15You want to get this hot throughout.
05:17You want the noodles to be hot.
05:19And they absorb some of the liquid and the flavor.
05:22But I'm going to go ahead and let this set for just a minute.
05:25And we're going to plate it up.
05:26Make it look nice.
05:27Take some pictures of it.
05:28Throw in some really good music.
05:30You guys can listen to that while you watch the pictures go by.
05:34And then we're going to come back and we're going to give it a taste.
05:36So you don't want to miss that.

06:15Beautiful food.

06:19Go ahead and stir this up just a little bit so you can actually see it for what it is.
06:24Everything in there.
06:25I've got some carrots, some cilantro, peanuts, and some bean sprouts that I put in there too.
06:31But this is what it looks like with it all covered up.
06:34You couldn't see it really well but that's exactly what we're looking at to eat.
06:41Get a shrimp here first.
06:44Beautiful shrimp.
06:47Tons of flavor coming off of that.
06:49Meaty shrimp.
06:51Make sure you take the tails off too.
06:53But meatiness of that.
06:56All the different textures.
06:57You've got crunch.
06:58You've got smoothness.
07:00You've got the egg in there giving it some flavor and some texture.
07:05Carrots are getting it.
07:06There's our noodle syrup.
07:10Let's give this a bite.
07:15Mmm.
07:20You've got the funk of that fish sauce.
07:22You've got that sweetness of the sugar added to it.
07:24It really does make a nice tasty flavor in there.
07:28There's some more noodles.
07:32Mmm.
07:36Another shrimp.
07:37Oh, there's a little heat in there.
07:38Should add some red pepper flakes in there.
07:40Give it a little color too.
07:42Not seeing our jalapenos in here though.
07:45But I think I just got some of the heat from it.
07:48But I'm going to go ahead and take another bite of this shrimp and then we'll close out here.
07:55Mmm.
07:56Yeah.
07:57It's my dinner tonight.
