00:00Can't stop, won't stop. Messy Baker over here.
00:02Boom!
00:07Hello, I'm Rosanna Pansito and today we're taking our childhood favorites and making them rich.
00:13Making is my love language.
00:15And today, we are going to be making something with a lot of love.
00:19Today we're taking the classic Funfetti cake, which is one of my favorites,
00:23and we are taking it to the next level.
00:25One of the ways we're elevating this simple Funfetti cake is making our own homemade rich buttercream icing.
00:33From scratch!
00:37First step to making our crystal royal cake is making our cake batter.
00:41We're going to start with our dry ingredients.
00:43In a medium sized bowl, we're going to sift our flour, baking powder and salt.
00:48That is nice! Look at that, nice and fine.
00:53Boop!
00:54And salt.
00:55Okay.
00:59Now I'm going to start on the wet ingredients.
01:01Over here in a larger bowl, we're going to mix together four eggs and sugar.
01:06Then on a medium speed, I'm using an electric hand mixer.
01:10Mix together until it's light and fluffy.
01:12It usually takes a couple minutes.
01:16Once mixed together, add your oil.
01:18We're going to slowly add the oil as we mix.
01:23Can't forget our vanilla for our vanilla cake.
01:26We're going to add 2 teaspoons of vanilla extract.
01:30And maybe a few drops more, because vanilla is delicious.
01:34I love vanilla extract, so a few drops more always end up in my bowl.
01:45Our egg mixture is ready, our dry ingredients are ready.
01:48Now we are going to alternate adding dry ingredients with the milk.
01:52So add half the dry ingredients.
01:54Mix it up.
01:56Milk.
01:57Mix it up.
01:59And then the other half of the dry, mix it up.
02:02And in between the mixing, don't forget to scrape down the sides using a spatula.
02:07Oh yeah, get in there flower!
02:15Now to make this vanilla cake a funfetti cake, you're going to add rainbow sprinkles.
02:20Or jimmies!
02:21Some people call them jimmies.
02:23Depends what part of the country you're from.
02:26Then using a large spatula, fold together.
02:29And a fold is unlike a mix.
02:32It's where you scoop down to the bottom of the bowl, and you fold over the top.
02:38And turn.
02:39Scoop under, over, turn.
02:42Under, over, turn.
02:44You fold things in when you want to be a little bit more gentle.
02:47It keeps air in the batter.
02:49Um, like if you're folding in blueberries to blueberry muffins.
02:53Or, I don't know, delicate chocolate.
02:58And as soon as those sprinkles are incorporated, stop!
03:03That's the biggest thing, you don't want to over mix.
03:05The batter is ready.
03:07We are ready to bake.
03:08All we need now is a cake pan.
03:10And look how cool this pan is!
03:13Now because there's a lot of ridges in here, you really don't want the cake batter to stick.
03:17So be sure to grease this very well.
03:20Yeah!
03:21Yeah!
03:23Yeah!
03:24Yeah!
03:24Alright!
03:24And I don't have a poor spigot, so just go for it.
03:27Be brave!
03:35Now these Luxe individual cakes are ready to bake.
03:38You're gonna heat your oven to 350 degrees and bake for about 30 minutes.
03:43While the cakes are baking, we're gonna make a buttercream icing.
03:46In a mixing bowl right in front of me, we're gonna add butter.
03:49Two sticks, this is at room temperature, makes it easier to cream.
03:52Powdered sugar, a little bit of milk, pinch of salt, and a little bit of vanilla extract.
03:57Then mix together on a low speed, you don't want a big poof, dust cloud.
04:04Great!
04:05Now I'm gonna add in the other half of our powdered sugar.
04:11Once the buttercream is ready, I'm just going to scoop it into a piping bag to make decorating a little
04:16bit easier.
04:17Icing is ready, I divide it into two piping bags, this one is for icing the cake, and this one
04:22is for decorating.
04:23They're both in piping bags, and then on one of them I've placed a metal tip to give it a
04:27little bit of design.
04:29Now give your cakes plenty of time to cool, and then you're gonna pop them out of the pan onto
04:33a drying rack.
04:34There we go!
04:36Before I ice the cakes, I'm gonna level the bottom, I'm gonna level one of them.
04:40So take a large serrated knife, be careful, don't get your fingers, you can use a large knife or a
04:46cake leveler.
04:47Boop, boop, boop!
04:48Cut off the muffin top, which is my favorite part of a muffin, it's also a little snack for you.
04:55Mmm! Mmm! Oh my gosh!
04:58Now time to ice, I like to start at the bottom of the cake.
05:01Woo-doo-doo-doo-doo-doo-doo-doo! And then work your way up.
05:05It doesn't need to look perfect because we're gonna use an offset spatula to smooth it out between each layer.
05:18Then I'm gonna sprinkle a little bit of edible glitter squares around the edges.
05:23Next, decorate the entire cake.
05:26I'm using edible sugar crystals and sugar pearls by gently pressing them into the frosting.
05:36So over here we have a classic Funfetti cake from a box and here we have a Funfetti crystal cake.
05:43Now for a taste test.
05:49Mmm! Oh yes, yes!
