00:05To discover how much goes into Dove chocolate, I've come to Ecuador where their bean-to-bar
00:10process begins. Each step is done by hand by the family farmers who've spent generations
00:16perfecting the process and taste. Dove chocolate sources a hundred percent of its cocoa for dark
00:23chocolate from Rainforest Alliance certified farms. The rainforest certification really
00:29allows farmers to have thriving income to grow cocoa of the highest quality but more efficiently.
00:37And at the Palo Santo cocoa farm, Claudia and Esteban Sainz continue their family's
00:42commitment to sustainability.
00:44Hola.
00:45Hello.
00:45Welcome to Hacienda Palo Santo. This is a family-owned business. It's been in my family
00:50since the past three generations and now my brother and I continue in the business. We're
00:54very oriented towards quality and productivity.
00:57And sustainability means a lot to you guys.
00:59Yeah. We always try to implement better ways to save water, to save fertilizers. We produce
01:05more, we sell more. It's a win-win situation.
01:07We care a lot about all the things that can affect the environment. This is our work, our
01:12passion. We love what we do.
01:15When it's ready to re-harvest when it has a red and yellow color.
01:22Oh, very nice. It's beautiful. Over the course of four to five days, the white pulp from the
01:29cocoa pods will ferment. What we're trying to do here is to raise the temperature. It turns
01:33bright purple to brown. One person comes to each pile, cuts open 50 to 100 beans, and then
01:40it's ready to go to the drying process. What do you have to do to make sure that the beans
01:46are drying evenly? In this stage, we use this rake to spread the beans around so that we
01:51get like an even dry level for the beans. This is the last step is when the beans are ready
01:57to ship. So it's cracking pretty easily. That means it's all the way dry. It just smells
02:01very nice as well. You can see that the majority of the beans are brown, and that's what we really
02:06want so that when we later roast the beans, you get that really nice dove chocolate flavor.
02:15It goes from the hands of the farmers to the hands of our experts, where it will be made
02:20into silky smooth dove chocolate.
