Competition-style lollipop chicken legs get the full smoker treatment here, with a clean trim, bold seasoning, and a glossy finish that looks ready for the turn-in box. The process starts by firing up the smoker to about 300 degrees, then shaping the drumsticks into lollipops by cutting around the knuckle and removing the bone for a neater, competition-style presentation.

From there, the chicken is coated with butter, an all-purpose rub, and Beach Bum original rub before going on the smoker for about two hours. Once the legs reach roughly 155 to 160 degrees internally, they’re glazed and returned to the smoker for another 30 minutes so the sauce sets without burning. The result is juicy smoked chicken legs with bite-through skin, rich color, and that BBQ candy look.

00:18so now the first thing you're going to want to do is go on out fire up your smoker get
00:23it up to
00:23about 300 degrees this is the perfect time to go ahead and let it start doing all that
00:29while you're doing the rest of the prep work after you fire up your smoker you're going to want to
00:35grab one of these and if you weren't impressed by my obviously stellar dexterity skills with that
00:41twirl there then maybe should be with my vocal skills because obviously i never stutter in any
00:46of these videos at all so you're going to want one of these set that off to the side next

00:51going to want to go ahead and grab your chicken leg i got these bad boys right here from the
00:55local
00:56grocery and you might be watching this video and thinking to yourself in these times of uncertainty
01:01perhaps i should wear some rubber gloves and to that i say no we're going to go out we're going
01:09to risk life and limb we're just going to go balls to the wall if you will and we're going
01:14to barehand
01:14this chicken okay so you're going to want to take your knife right about here below that knuckle on
01:19the top and you're going to want to cut all the way around make sure you get through all those
01:24ligaments
01:24all that fat that muscle get through everything get a good clean cut so as you see that bone right
01:30there you want to make sure that you get your fingers in there and kind of loosen up that bone
01:36get it out of there try and get it out in one piece i just broke it a little bit
01:40but as long as you get
01:42it all out of there that's what you're really concerned with you don't want a little bone shard
01:46stuck down in there there we go so we got that whole bone out of there
01:54pop that right off of there most of the time you'll get a good clean break
02:05all right guys now that we have our chicken lollipop the next thing we're going to do is grab some
02:10butter
02:11don't skimp on the butter get a good butter i like to use uh carry gold normally i would go
02:16on i would
02:17go salted but uh you know supplies are a little hard to get with the current pandemic if you will
02:24so what we're going to do is we're going to go ahead and break the butter open
02:28and if you look at that you see that's a good quality butter it's it's so what we're going to
02:32do
02:33is we're going to go ahead and take our knife
02:37we're going to cut a couple pads off and then we're going to go ahead and drop that into the
02:43pan
02:44um the next step we're going to take is we're going to go ahead and grab some of that
02:48all-purpose rub this will be available on our website soon skullandmortar.com and we're just
02:55going to give those a good cover right there now this rub is perfect for anything you can use it

03:02chicken pork steaks hamburgers whatever you want to use it on this is a good base rub use it in
03:09beans
03:10use it on vegetables of any sort really it's just a i mean it's an all-purpose rub then we're
03:16going to
03:16come back across it with the beach bum original rub been using this on my food truck for years
03:26and after we get that we're just going to plop it right down into the pan
03:30make sure you get a really good coating do not skimp
03:36so i'm going to take our chicken throw it on the smoker give it a good two hours or so
03:41we're looking
03:42for an internal temperature of about 160 155 to 160 in that range and then we're going to pull it
03:49off
03:50and glaze it all right guys we're going to hop out to the smoker we're going to check on our
03:54chicken
03:55see how it's going see if it's time to hit that glaze okay we're going to go ahead and dip

04:02and get the bone and everything
04:07get a good covering on there
04:24now the next thing we're going to do is we're going to take the whole rack and we're just going
04:28to put it right back on the smoker give it about another 30 minutes or so you don't want to
04:32burn
04:32your sauce but you want to get a nice glaze you want it to firm up there all right guys
04:37so we pulled
04:39our chicken lollipops off of the smoker and they look beautiful if you can find more beautiful chicken
