00:00Did you know a name brand frozen garlic loaf still runs about five to six dollars for 10 ounces
00:04and a sit-down Italian basket is six to eight? Four pantry staples make a whole round loaf in
00:09an air fryer. Flour, water, yeast, salt. Garlic butter is the extra that soaks the crust.
00:15A five pound bag of flour is about $3.97. This loaf lands around $2.50 once you count butter
00:22and real cloves. Tonight I'm going to show you the wet dough that kneads itself while you walk
00:26away. The two-side bake so the bottom is not pale and the garlic cheese paste that melts on contact.
00:32I run this on weeknights when turning the big oven on feels like a second job. I'm not paying five
00:38dollars for a freezer garlic powder. The fold that turns soup dough into bread and the leftover trick
00:44that becomes Texas toast tomorrow are coming. First the bowl because this only works if the dough is
00:50wetter than your brain wants it to be. Your four ingredients. 350 grams of all-purpose flour.
00:55That is about two and three-quarter cups. Spooned and leveled, not packed like brown sugar.
01:01Five grams of dry yeast, which is a little over a teaspoon or most of one supermarket packet.
01:07One and a half teaspoons of salt. 280 milliliters of warm water, about a cup plus three tablespoons.
01:14That water ratio is the whole trick. 280 grams of water on 350 grams of flour is about 80%
01:21hydration.
01:21At that wetness, gluten forms. Because the proteins drink, not because you wrestle the bowl.
01:27Kneading is just lining those strands up by force. Thyme and a couple of folds do the same job,
01:33which is why a no-knead dough looks like cake batter and still bakes into a loaf.
01:37Add flours until it looks like dough and you went back to grocery store dense.
01:41Water temperature. Baby bath warm. Not tea.
01:45If you can hold a finger in it, you were close. Too hot and you kill the yeast and then
01:49you baked
01:49a garlic cracker. If the packet says active dry, stir the yeast into the warm water with a teaspoon
01:55of sugar and cover it 10 minutes. It should foam. If it just sits there looking sad, the yeast is
02:00dead.
02:01Throw it out and open a fresh packet. If the packet says instant, skip the nap and mix it with
02:05the flour.
02:05Water. Bowl. Water in first, if you bloomed. Flour. Yeast. Salt on top. Spatula. 30 seconds until you
02:13cannot see dry flour. It will look wrong. Sticky. Shaggy. Closer to thick pancake batter than pizza
02:19dough. That is the loaf. Cover it. Warm spot. 40 minutes. It should look puffier and a little bubbly,
02:25not doubled into a balloon. You're not making sandwich, Pullman. You're making a wet bowl. Here's
02:31the extra that makes it garlic bread instead of nice round loaf. The viral air fryer version,
02:36grated four cloves and a handful of parsley into the dough with a splash of olive oil.
02:4025 milliliters, about two tablespoons, before the flour went in. That puts garlic in the crumb,
02:45not only on the roof. Do it if you have cloves. Skip it if the jar is empty. The butter
02:50paste later
02:50still saves dinner. I grate mine on the cheap holes so you get pulp, not chunks, that burn.
02:5540 minutes is up. Wet your hand. Grab one side of the dough, stretch it up, fold it over the
03:00middle.
03:01Turn the bowl. Do that four times. You just line the gluten up without a floured counter and a
03:06workout. Cover again. 60 minutes this time. It should jiggle when you bump the bowl and look
03:10like it has some air in it. If your kitchen is cold, give it another 15. Yeast is not a
03:15microwave.
03:16Parchment in the air fryer basket. Brush it with a little oil so the loaf does not weld on.
03:21Do not preheat with the paper sitting in there empty. Paper plus a heating element is how you buy a
03:26new
03:26basket. Flour the counter. Not the dough's entire sole. Tip the blob out. Dust the top. Fold the edges
03:33into the middle until it is a round that will fit your basket. You are tucking, not punching the gas
03:38out. Set it on the paper. Flatten it gently so the top will brown instead of turning into a pale
03:43dome
03:43that hits the coil. Air fryer at 180 celsius, 355 fahrenheit, 15 minutes. If yours runs hot, peak at 12.
03:52You want color on top, not a charcoal lid. While that runs, the paste. 35 grams of butter, about two
03:59and a half tablespoons, melted on low. Three cloves grated in. A small handful of chopped dill or parsley,
04:05whatever is in the drawer. A handful of shredded mozzarella. Pinch of salt. Chili flakes if you like a
04:11little heat. Stir it into a thick spread, not a soup. That is the frozen loaf topping, except the
04:17garlic was a plant this week. If this already has your air fryer in your head, subscribe. It is free.
04:23Members get the longer tests I keep off the main upload. I put the flour bag, the frozen loaf prices,
04:28and the gram list in the description. The flip that browns the bottom, the don'ts that kill yeast,
04:33and the leftover Texas toast move are next. 15 minutes. Basket out. Flip the loaf. It will feel soft.
04:40That is fine. Back in. Same temp. 15 more. Both sides get the fan. Skip the flip and you eat
04:46a white
04:46gummy underside that tastes like regret. When the second side is gold and it sounds hollow,
04:52if you tap the bottom, it is done. If you own a thermometer, the middle wants to be around 95
04:56to
04:5698 Celsius. 200 to 210 Fahrenheit. I usually tap it and look at the color. Loaf onto a plate. Paste
05:03on
05:04while it is screaming hot. Residual heat melts the cheese and pulls the butter into the crust.
05:08Wait three minutes so you do not steam your fingerprints off, then tear. The crumb should
05:13be open and a little glossy. Not sandwich bread tight. If it is dense, the dough was too dry,
05:19the yeast was tired, or you rush the second rest. Next round, trust the batter look. A few don'ts
05:24that save the bag of flour. Do not use boiling water. Do not dump extra flour in because it sticks
05:29to the spatula. Wet hands. Not more dust. Do not skip salt. Unsalted wet dough tastes like hot foam.
05:36Do not block every hole in the basket with a solid sheet of parchment the size of a pizza.
05:40Leave edge gap so air moves. Do not run two giant loaves in a tiny basket. Split the dough and
05:46bake
05:47back to back. Oven extra if the air fryer is full of fries. Dutch oven or sheet at 220 Celsius,
05:53425
05:54Fahrenheit, about 25 minutes, and you lose the cute flip. The dough does not care. The air fryer is the
06:00weeknight machine. Leftovers are the second loaf you did not know you bought. Cool completely. Slice.
06:07Next night, three to four minutes at 350 in the air fryer, and it is Texas toast. Except it was
06:12real bread yesterday. Freeze halves wrapped tight. Reheat from frozen a few minutes longer. Same dough.
06:18Skipped second rest. Flattened thin. Sauce and cheese. 12-ish minutes. Weeknight pizza. Not a second
06:24recipe. Fridge trick if you have the afternoon. After the first mix, cover and refrigerate overnight.
06:30Cold yeast is slower, and the flavor gets a little more like bakery and a little less like
06:35I just added yeast. Next day, folds, hour on the counter, then the same bake. That is how you
06:40start it at breakfast and eat it at dinner without hovering. Money, because the title should match the
06:45receipt. Great value frozen garlic toast. Sits around $2 for eight slices. Their cheese loaf is about $2.68
06:52for 12 ounces. Name brand is the $5 to $6 hit for 10 ounces. Flour at $3.97. A five
07:00-pound bag makes this
07:01dough about 60 cents a flour. A fraction of a yeast packet. Butter and garlic to land. And you're $2
07:07.50
07:08for a round loaf that actually fills a plate. Once a week versus a $5 box is about $150 a
07:14year. You stop
07:15handing the freezer aisle. The cheap toast can still win on price if all you want is eight thin slices.
07:20This wins if you wanted bread. Do this when pasta is already on the stove, when the oven feels like
07:26a tax, or when the frozen box tastes like the warehouse. Yeast does not care that it is Tuesday.
07:31If this turns four pantry items into a loaf you would have driven out for, send it to whoever
07:36keeps a $5 garlic brick in the freezer. Take care, and I will see you in the next one.
