Why wait for the Girl Scouts when you can easily make homemade thin mints year-round? In this video, Nicole shows you how to make two-ingredient thin mint cookies using Andes chocolate mints and buttery Ritz crackers. After melting the chocolate, simply coat the crackers in the melted chocolate before allowing them to chill and harden in the fridge.
