34:04Eight legs of an octopus and then the chilli dough is going to be the head of the octopus.
34:09Nick's octopus will feature twisting tentacles flavoured with dillon fennel, sesame and a bold chilli head to capture the ocean's

34:18First of all, why an octopus?
34:20Well I do, it's inspired by one of my favourite tattoos and I do love that underwater deep sea sort
34:25of thing.
34:25You know if you over handle your dough it's going to be tight.

34:28So a good tip is to practice your braiding on bits of string or ribbon.

34:33Just to get that design before you actually attempt it with the dough.

35:01In her ambitious seven strand braid, Charette combines a rich molasses sweetened wholemeal dough with a fragrant orange, fennel and
35:10cardamom dough.
35:11Seven strands is a lot.

35:13One thing you need to be aware of when you're braiding so many strands is to get all the strands
35:18the same size.
35:19Yeah.
35:19Because if one is bigger than the others, then it means the baking is going to be a lot harder.

35:26So there's a lot to contend with in this.

36:05Strawberries and cinnamon is not something I would put together because cinnamon is almost a hot spicy flavor and strawberries
36:10is sweet and quite subtle.
36:13It's not the strongest flavor.
36:14So it'll be interesting to see how you balance that.

37:43with the Christmas cracker, telling bad jokes.

37:52Jacob is channelling the festive season with an eight-strand butter-enriched dough
37:57layered with orange-soaked apricots and rich chocolate malt.

38:04So you just want to make sure you get the spice coming through and you actually taste it.

40:07One of the first things I think of Nonna is her amazing sunflowers that she grows in the veggie garden.
40:13Matt's sunflower inspired loaf will be layered with butter and pecorino cheese.
40:18Spirulina will flavour the braided leaves.
40:21Oh, spirulina.
40:22I can see how it would complement the cheese, but it's all about the balance.
40:25It's too much and then it can become very overpowering and very kind of green and bitter almost.

40:33I've boosted the colour of doughs as well using spinach because, you know, it's got a really great green colour
