00:00Okay, so 2010. So that's when food trucks kind of came into this space. Do you think it's a more
00:06affordable way for these chefs to fulfill their dream of opening up a big restaurant?
00:12Jeff, it's the democracy of the restaurant world. Raising money for a restaurant's never easy. And
00:17I think it's like 70% of restaurants never see their second birthday. And so having some great
00:22place where you can just get in the game, get your brand started, you know, borrow some money
00:28from friends and family, you can start a food truck for less than 100 grand.
00:31Wow. I mean, it's not a new thing. It's been around for a minute, but now it's like in vogue.
00:36It's the American expression of street food. So if you go to Europe or Asia, everybody has like
00:41street food culture, but never really anything in America. We have fast food, but we never really
00:45have street food until food trucks. And now that we do, you put four or five of them together in
00:51a
00:51downtown area on a Friday night, string some cafe lights and get a band and a beer truck and you
00:55got a carnival. The celebrity jobber podcast with Jeff Seto.
