04:57This is a special type of cheese called mozzarella cheese,
05:01and we're going to need some in our lasagna.
05:03Now, let's find out some more on our computer.

05:13Mozzarella cheese comes from milk made by an animal called a buffalo
05:18that looks a lot like a cow.
05:20First of all, all the buffaloes are milked.
05:27The milk is then put in a big machine where it is heated up
05:31until the hard bits, called curds, separate from the watery bit,
05:36which is called whey.
05:37The curds and the whey are then emptied out.
05:47The curds are kneaded and stretched in a large machine
05:52until they become a big, stringy cheese.
05:56The stringy cheese is stretched into a long strand of cheese,
06:01which is cut into balls by another machine.
06:04These balls of mozzarella are then put into packs with water
06:08to keep them fresh for us to eat.
06:14And we've got some lovely mozzarella cheese right here in the kitchen,
06:18and we're going to squish and squash it into little pieces with our fork.
06:22So, everyone, let's get squishing.

10:03Add to the top of the lasagna, the smooth ricotta and the crumbly mozzarella.
10:09And now we're going to sprinkle some olive oil on top.
10:14So dip your little brush in.
