13:22things like it's it's like a pleasant savory taste it's unique so you know ripe tomatoes they're just
13:29yummy or smoked fish that's yummy strangely how but it is a specific thing that the receptors on
13:35your tongue respond to this it's interesting now you know you can buy tubes of umami in our supermarkets
13:41and I'm sure people don't know what to do with it you probably think it's like marmite on your toast

13:52parmesan cheese is rich in umami and you could combine that with seaweed to produce unique taste

22:31and yesterday I talked about food named after body parts,
22:34and today I thought I'd look at the curious inspirations behind some food names.
22:40Like tailoring, for example.
22:42The Italian-filled pizzas, calzoni, mean literally trouser leg,
22:45because they look like one, sort of stuffed, if you like.
22:48While tagliatelle and fettuccine both mean little ribbons.
22:53Some foods are named after weapons, believe it or not.
22:56I mentioned recently on the programme that pomegranate is the source of our modern grenades,
23:01because of the shape.
23:03Well, garlic comes from two old English words meaning spear leak,
23:06because of the shape of their leaves.
23:08And incidentally, the gar element of garlic is behind all sorts of names
23:12that have slaying and slaughtering at their heart.
23:15The innocent name Gerald means spear ruler, and Garibaldi means spear bold.
23:21Looking far back, Greek and Roman gods ensured their own immortality
23:25by dining on ambrosia, and that word meant immortal.
23:29And to quench their thirst, of course, they drank nectar.
23:32And that's, again, Greek, and it means overcoming death.
23:36And its legendary sweetness inspired the name of the fruit that's a nectarine.

24:06but every time he reached for it, it again receded from his reach.
