00:19café wird oder wurde am wochenende neu eröffnet und wir haben die besondere ehre heute morgen
00:25ein bisschen mehr zu erfahren über kaffeehaus traditionen über kwhs tradition in ungarn und
00:33ich freue mich heute morgen ganz besonders den inhaber dieses wunderbaren cafés dieses gebäudes
00:40begrüßen zu dürfen a wonderful good morning and thank you for having us here in this year
00:45traditional building and new project of our of your group so thank you for having us here thank
00:54you for visiting us and thank you for joining to this beautiful program yeah so you know our
00:59magazine is the virtual coffee cup in hungary and that is the best place for us in this morning to
01:06be here and you open an old traditional house here in budapest for the audience now and what i learned
01:16at your press conference first time you can give us some facts about this building and about this
01:21project but what i learned is that you try with your projects to bring the people back in retro times
01:29in modern atmosphere and this mix i was fascinated from this at your press conference because i feel
01:37it not only in the in the building i feel it in the food i feel it in the people
01:41who are working here
01:42and so now it's your stage please tell us a little bit more about this first about this project yes
01:50we are now here in dunapar cafe this is this is a historical cafe but this is probably one of
01:56the youngest in budapest only 90 years old so let's consider it young you know from cafe uh from cafe
02:05time of course we manage and operate beautiful other historical places like new york cafe like undel
02:13like central cafe uh like the royal guard cafe so several you know historical places which are more
02:19than 100 years old but this is this cafe is situated in one of the most iconic bauhaus building in
02:26budapest
02:26uh and the building itself was built in 1935 1936 uh and a funny fact that this area where the
02:34cafe is
02:35originally it was planned to be a cinema uh and when the architect realized that there's a beautiful
02:41scenery a beautiful park overlooking a green area even a sudden idea came that why would we lock such a
02:50beautiful that uh place here and to create a dark area then they decided to create a beautiful historical
02:58cafe of course it wasn't intended to be historical it was just intended to be a cafe where you know
03:03locals
03:04and residential area citizens can meet here in budapest so what i learned about our talk before is that you
03:14bring
03:14back the people to the retro times what you tell me is interesting because in the early times before
03:22people meet here in these caves cave houses and they bring their stories here and a big part of life
03:32is here in this uh cave house um can i say that is the old facebook uh 1.0 or
03:41i mean if we close our eyes
03:45and we try to travel back in time uh between the two two world wars or at the turn of
03:50the 19th and 20th
03:51century budapest has had nearly 500 coffee houses this is an incredible number i think even nowadays the
04:01number of coffee houses and much less and of course budapest was a much smaller city far less than one
04:07million uh citizens living in budapest international tourism didn't even exist uh and of course at that
04:14time there was no telephone uh of course no facebook of course no radio nothing where you know direct
04:22communication between people could occur so it means that if i wanted to meet someone if i wanted to
04:30discuss someone i had to visit a cafe where prob most probably i could meet him or her at that
04:38time
04:38so these places these historical cafes were the living rooms uh of the city where you know poets
04:45artists and everyday people even doctors even lawyers were coming here and even work there let's
04:51imagine a time when these cafe houses uh created a place where citizens spend not one or two hours six
05:00seven eight hours even different occupations lawyers were working in coffee houses creating you know
05:07small legal documents even doctors were uh receiving patients in cafes so it was a completely different
05:15time now we we are visiting these places just to have a coffee to have a breakfast to have a
05:21lunch of
05:21course one or two hours but not six seven eight hours even a lot of coffee houses didn't even close
05:26so
05:26it it they were open all day long uh and different occupations came to visit the cafe where they have
05:34finished work so it was a completely different life of course this this age has already gone but but
05:40these beautiful places remained with us and our major mission is how to fill them with life and how not
05:46to lose those let's say historical values which created a real success but still creating something
05:54which meets the modern requirements so um we are here on this press conference and you show us also the
06:02food and i feel the food was the same project of the same uh thinking about to bring the old
06:09times
06:10mixed with some modern uh modules uh so also the the meals what i say what i see um can
06:17you give us
06:18some facts about this food concept what you have here but also in in other restaurants we have
06:25of course uh certain historical places in budapest had their even gastronomic history uh if
06:33if not talk about gundal which is not this place or probably one of the most famous hungarian restaurants
06:37the majority of the now famous hungarian dishes have been invented here so the chicken paprikash
06:44uh even gundal as a family they came from germany and they brought they imported the wiener schnitzel
06:51uh to hungary in the in the early 20th century they worked for six years to import let's say wiener
06:57schnitzel
06:58but even the shomloi galushka uh even the gundal pancake uh and certain items have been invented
07:04into the kitchen of gundal so uh and we call it let's say national 11 you know those you know
07:10players
07:11if there ever be a gastronomic you know uh football championship all over the world we would name
07:17these uh these dishes which really represent the true uh iconic taste of hungarian gastronomy
07:24this area has always been residential area and it wasn't famous for its gastronomy but this area
07:31represented a very uh famous and intellectual jewish minority in budapest
07:37uh and it means that this let's say uh uh modern european jewish gastronomy
07:46really has a huge impact on this area if you just walk around here you see these you know eastern
07:53flavors all around here in budapest and now we try to mix here this modern cafe culture gastronomy
08:00with this uh little bit eastern uh and jewish tradition itself so if if you have a look at the
08:07menu you
08:08will see representing uh those tastes but but of course uh you know now we consume a lot of let's
08:16say free uh let's really be gluten-free or sugar-free or dairy-free uh and of course we have
08:22to keep pace
08:23with this one otherwise you know guests will not feel them some that themselves comfortable but i see a lot
08:29of
08:29things on your menu so i think everyone have everything what they need of course interesting
08:35is what you say with the wiener schnitzel because most of the time when we post something wiener
08:40schnitzel and the people are no what wiener schnitzel have nothing to do with hungary but in every
08:44restaurant you see it on the on the menu so it was interesting to hear from you of course we
08:49will be part of the hungary austro-hungarian empire so we you know created somehow one unity
08:55at that time yes um when we speak about the food uh let's speak about your other projects also you
09:03have you tell this the gundel restaurant i think there's one of the most important restaurants in in
09:09in hungary and also well known in the world so how important is the the situation of tourism also for
09:17your project but i think it's it's not only the hungarian people come to here because when a tourist is
09:22coming to budapest i think on his map is gundel is new york cafe and in the next time also
09:28dunapa cafe
09:30how important is the the tourism situation for you especially in in budapest but also in whole
09:36hungary of course in budapest these historical places cannot live without international tourism
09:44of course local visit them let's imagine new york cafe new york cafe hosts 2500 3000 guests per day
09:53there wouldn't be any there wouldn't be so many locals it means nearly one million visitors in a year
10:00of course whole budapest is two million so it means that everybody should come let's say
10:05nearly once in a year to visit new york cafe so international tourism is a must but these places
10:14are far more than just a gastronomic places they represent the hungarian culture the the architectural
10:21beauty of budapest let's imagine that the beauty of budapest what we now admire and the chain bridge
10:30the parliament the thermobath the hero square even your cafe was built at the turn of the 19th and 20th
10:38century so between let's say 1870 to 1920 1930 so that 50 60 year period was the golden era of
10:49hungarian
10:49architecture and all those beautiful classical buildings have been built at that time and even
10:56tourism come to budapest to to visit and to experience this charm this beauty this elegance
11:03what budapest can afford can offer to them i would say it's like a museum when i see the new
11:08york cafe
11:08or the bundle or something like this you you see so many things from earlier times um and
11:15uh i think the budapest the new york cafe in budapest is one of the most famous places i see
11:22so many
11:24selfies i think one of the most selfie points in in budapest i would say uh what the new york
11:30cafe have
11:31and every time when i pass it is a row uh a queue in front of this cafe because the
11:36people want to go
11:37in yes as far as i know it's it's interesting fun fact that even chinese tourists you know coming from
11:44far east the the the the top in the top three there for them there's a new york cafe as
11:49far as we know
11:50new york cafe is the most instagram instagramable places all over europe uh anyway so of course uh interesting
12:00fun fact that the new york palace was built by the new york insurance company uh 131 year ago
12:07and new york cafe was intended to be the world's most beautiful building so the brief to the
12:13architecture was to build something what is astonishingly astonishingly beautiful and it
12:20became one of the symbol of the cafe beauty all over the world and it has been elected uh several
12:27consecutive times to the world's most beautiful cafe and of course we we present it as the most
12:33beautiful cafe to the audience as well i think it is so important what you do because you build bridges
12:38from the tradition from the culture to the modern times and also help the tourists to understand the
12:45hungarian culture the hungarian tradition and i think it's the best way to understand on the in in
12:52food and in feeling the tradition um in the in the in the last part of our talk now for
12:59you can tell us some
13:01private stories what you have in your project so like new york cafe or bundle cafe we have some some
13:09memories we say oh that was so funny or that was a emotional moment for me
13:14uh let me cite let's say two examples when we started the new york cafe in 2009 so it was
13:2317 years ago
13:24the cafe went nearly bankrupt before that time so it was mismanaged but of course international tourism
13:33was already here and we have decided you know several uh interesting ideas one of the ideas was
13:39was that if somebody wants to uh post a postcard we give them the postcard they address they write
13:48it and we post it to them for free uh and in three or four years we have posted nearly
13:54one million
13:55postcards all over the world uh at at that time when when you know social media already existed so
14:02in the in in in in 2022 2023 2024 so even in this modern age and it was very peculiar
14:11very interesting
14:11to see how happy people were that they can send a postcard because that that tradition has disappeared
14:17and when you receive and i remember that every single day there was a pile of postcards you know
14:24going to 160 countries all over the world you know saying hello from budapest and that was an interesting
14:30idea and we didn't expect but it has a huge impact on the visibility of the new york cafe from
14:36korea to
14:36johannesburg from mexico city to moscow so all over the world you know postcards were fleeing out hundreds
14:42of postcards on on on daily basis so normally you are the founder of uh social media i think because
14:50this
14:50was the first step for social media it was a kind of postcard media but yes but it is amazing
14:55to hear
14:56something like this in these early times to have the same uh thinking what you can do with social
15:02media you can do also with physical things yes uh gratulation because this is a wonderful idea so uh in
15:10the end give us a view of more projects you are have in your view especially here in budapest i
15:18hear or i
15:18see a press release the last days there's a new hotel especially for families but which projects you can
15:26also speak about today for the last minute yes uh one of the other most iconic and historical cafes now
15:36we are
15:38rebuilding this is the museum cafe this is the oldest cafe in budapest it was opened this year 150
15:44years ago so it was opened in 1876 and it's called the museum cafe this is just by the corner
15:52of the national
15:52museum in the downtown of budapest and it's been closed after covid and now we are revitalizing and
16:00redesigning and refurbishing uh you know trying to create the vibe what there used to be of course
16:11there are very few photos at that time but even the even the ceiling given the chandeliers even the
16:17mirrors even that wall facade uh remain intact and we try to refurbish and and redesign and repaint
16:25them to to this modern uh way of life so if you are still interested it's going to open in
16:32october
16:33and you can you can even visit yourself personally a beautiful new historical cafe in budapest important
16:39information for our uh people watching us now so this i think this is uh so we can make in
16:45budapest uh
16:46cave has a tour because the most important places are recovered from you yes and so in the end thank

17:02and i think it is so important what you do also for tourism for hungary um that is that are
17:09every
17:10cafe has or cafe is a story and this is what you make is the storytelling and in the modern
17:17times it's
17:17more than important to tell these stories because the people um only see and feel when they hear the
17:25story say okay i have to go there and uh also in this geopolitical times it's good to have nice
17:31stories
17:31stories great stories that make fun in the morning and when we hear something like this thank you for
17:37so thank you for these things and uh yeah so in the end i would give our coffee cup to
17:44this place
17:45in the wish that this place also is running in the next months and years the same as before so

18:12hier in budapest wirklich ausmachen für mich eine wirklich berührende geschichte wie man hier
18:18wirklich geschafft hat traditionen kultur in die cafés in die häuser zu verpacken und wieder aufzuleben und
18:25besonders interessant für mich die social media story schon in frühen jahren hat man verstanden
18:30dass die kommunikation sehr wichtig ist erzähle über das was du gesehen hast das hat man mit postkarten
18:37gemacht für wundervoll in diesem sinne wir trinken jetzt noch einen guten kaffee hier im duna park
18:42café wie gesagt am wochenende eröffnet lohnt sich auf jeden fall gegenüber der margareteninsel hier
18:48mal vorbeizuschauen guten kaffee zu trinken exzellenten torten zu essen und ein wunderbares menü aus alten
18:54zeiten zum beispiel paprikasch da zum beispiel dies eines dieser menüs die man hier auf jeden fall
19:00essen sollte in diesem sinne einen wunderschönen tag wir sehen uns wieder dann vielleicht in einem
19:03der anderen cafés hier in budapest oder an einem ganz anderen ort in ungarn vielen dank fürs zuschauen und
