00:03Shelf-stable pickles are made by hot packing process
00:06with vinegar, so you can keep these on the shelf,
00:08room temperature, before you open them,
00:10almost indefinitely.
00:11Refrigerated pickles are almost like shelf-stable pickles,
00:13except they're not shelf-stable.
00:15They're made in a cold packing process,
00:17so they have to stay cold, otherwise they will spoil.
00:22Salty.
00:23Yeah, very salty.
00:24The texture's really nice and crisp.
00:27I really enjoy that part.
00:28But the pucker and the punch isn't as balanced
00:30as I want it to be.
