00:06well hello there folks and i hope that i find you very well indeed and a warm welcome back to
00:11what's for tea and tonight i made this delicious basil pesto pasta and you can buy pesto in a jar
00:18anywhere these days but there's nothing quite like fresh homemade pesto stir this through your
00:25favorite pasta and you can top with some chicken you know if you want to make it more of a
00:29meal
00:29or more substantial but it's really really tasty so i'll just show you how i'm putting this together
00:35so it's a basil pesto so obviously you're going to need some fresh basil i am going to use this
00:40whole plant and this is going to give me enough pesto for about three people generous portions
00:46and then you're going to need some parmesan cheese as well so this is the one that i am using
00:51and also some extra virgin olive oil as well and this is the one that i am using here and
00:57you're
00:57going to need some pine nuts or i am using pine nuts i think pine nuts make a lovely pesto
01:02so i'm
01:03going to use the pine nuts and then some salt and pepper as well and i'm going to throw in
01:07a couple
01:07of cloves of garlic so i'm going to use my food processor anything like this will do you just want
01:14to blitz everything down so the first thing i'm adding is the grated parmesan cheese and then i'm
01:20going to add the pine nuts as well or whatever nuts you're deciding to use and you just want to
01:26let
01:26this blend away until it forms a wee dough so initially it's going to be quite dry and then
01:31eventually it will go crumbly and then it will all collect together into the one ball so it will look
01:37like a paste or a soft dough something like this is ideal and it should be nice and squishy and
01:44then
01:44you can move on and add everything else so i'm going to add half of the basil on top of
01:50that wee dough
01:50there and then i'm going to add a couple of cloves of garlic as well you can add as much
01:55garlic as you
01:56like but this is quite strong so just two is fine half of the olive oil your salt and pepper
02:03and then
02:04the rest of your basil on top of this and then i'm just going to end with the rest of
02:09the olive oil
02:09on top of the basil
02:20and again you just want to blend all of this until it's really well combined and it'll turn into a
02:26sauce just before your eyes and it should be looking something like this it's beautiful and vibrant and
02:33green nothing like the stuff that you get in the supermarket which tends to be a bit on the gray
02:38side
02:38or a bit on the murky side so this is beautifully vibrant so now you're ready to go so go
02:44over to
02:45your cooker you want a nice large pan and i'm going to half fill my pan with water and then
02:50i'm going to
02:50get this up to the boil i am going to use spaghetti but this is thicker than normal spaghetti and
02:56it's
02:56lovely so if you can find this highly recommend using this i was going to use fusely you know but
03:02you
03:02can use whatever pasta you prefer but i've just seen that thick spaghetti and i thought that's going to be
03:07really nice with the pesto so i changed my mind get some salt into your water and then pop whatever
03:14pasta you're using into your water and you want to let this bubble away or boil until it's cooked to
03:21your own liking i gave this about 13 minutes because we like a wee bit of bite still in the
03:26pasta i don't
03:27like it too soft but you can cook this for as long as you like and when you're happy just
03:32drain the water
03:33out but keep about 100 ml of your pasta water back because we're going to use that you know to
03:39create
03:39the sauce get your pesto into your pasta that reserved pasta water you just want to gently stir
03:46everything together and i'm just going to move this around in the pan just to make sure i don't break
03:52it
03:52up too much or try and prevent it breaking up too much i'm just going to get a wee shuggle
03:56around
03:57or a wee mix around without the spoon just so that it coats everything really well and this is
04:04fantastic and it smells amazing as well like i said this will do three people generously because we are
04:10having chicken on top of this but if you don't need quite as much pesto like i said you can
04:15half the
04:16ingredients and you'll get half the amount of pesto obviously and that you know the texture of the
04:22pasta this is bronze dye pasta so it's quite a grippy pasta so it holds on to the sauce really
04:28well so highly recommend it if you can find it you know bronze dye pasta spaghetti recommended but yet
04:35second choice would definitely be the fusely or the fusilli but it's entirely up to you and this was
04:41absolutely perfect so i'm just going to pop this into a bowl and i've also sliced a few you know
04:47these
04:47small tomatoes and stirred that through the pasta as well just for a wee texture change so plenty of
04:53pasta and then some shaved parmesan on top as well some black pepper and i've just popped some chicken
04:59into the air fryer with some seasoning you only need to do the chicken breast for about 22 minutes
05:05on 180c with whatever seasoning you prefer i like to brush a wee bit of oil on and then the
05:11seasoning
05:11and then just let it rest for five minutes you know once it's ready slice that and pop it on
05:16the top
