00:11and i hope that i find you very well and today for you i've got this delicious and i mean
00:17delicious
00:18beef curry a friend of mine used to do you know videos on youtube she hasn't done them for years
00:24but this was one of her very first video recipes and let me tell you this is going to be
00:30one of the
00:31best curries that you will ever make it's one of the best that i've ever made highly recommended
00:37if you do like a curry i am using beef but you can of course swap this out for a
00:42different meat
00:43if you prefer you'll just need to adjust the cooking times so i am using beef silverside and
00:49i would recommend getting your beef in a big hunk like this and that way you can cut it into
00:54whatever
00:54size you like because more often than not you know if you get you know diced beef from the supermarket
01:01it can be quite small and when you know at the end of the cooking time it can end up
01:05very small
01:06so i would say get your beef in the one big hunk and then just cut it down to size
01:10i've made mine
01:12quite thick and chunky as you can see because this is going to cook for a wee while so i
01:17didn't want it
01:17all breaking down and shredding up i did want it to stay in these nice big chunks but you can
01:23do yours
01:23obviously whatever size you like and i'm also using some bay leaves some cloves and cardamom pods
01:31as well and then i've got a teaspoon each of turmeric as well and then i'm using coriander leaf
01:38and also ground coriander i'm using some paprika i've got a touch of salt there as well and then
01:44some chili powder now you can use hot mild whatever you prefer i'm using hot chili powder and then some
01:51cumin seems like a lot but if you're a regular cook you will have a lot of these already and
01:57then
01:57just a few tablespoons of vegetable oil get that nice and hot and then you can add the whole spices
02:03to this and let this cook away for about a minute just to let your oil infuse with all those
02:09lovely
02:09flavours and then you can add your chopped onion now you want to let this cook nice and slowly for
02:16about
02:1610 minutes until it's properly softened you know don't rush any of this this curry is going to be
02:23so much better if you just do it nice and slowly take your time and don't rush it let all
02:28those
02:28flavours come out and develop and you're going to end up with a better end result trust me so let
02:34these cook like i said nice and slowly for about 10 minutes until they're properly softened and then you
02:40can go in with your beef and again you just want to cook this nice and slowly until it's browned
02:46all
02:46over and you don't see any pink or you can more or less see no pink you don't need to
02:52cook this
02:52obviously all the way through we are going to cook this for over an hour but you just want to
02:57make
02:57sure at this stage that it is browned nicely all over and you can barely see any pink in fact
03:03ideally
03:03you should see no pink and then you can go ahead and add your garlic and your ginger paste
03:09you can use fresh garlic and ginger if you prefer i prefer to use the paste just because it's a
03:14smoother texture and it's not as bitty so you want a nice smooth sauce at the end and let this
03:21cook
03:21again just to let the ginger and the garlic soak into your beef and then you can throw in the
03:26rest
03:27of your spices and just give these a really good mix together
03:40i'm also going to add some natural yogurt so this is full fat natural yogurt which i would recommend
03:47adding instead of low fat natural yogurt is just going to help prevent your sauce from splitting
03:53and you also want to add this nice and slowly so add a wee bit make sure it's well stirred
03:58in add

04:03your sauce from splitting so yeah just do this nice and slowly and just keep adding a wee bit
04:09stirring it in until it's all fully incorporated
04:21so the last thing i'm going to add in terms of herbs and spices are these fennel seeds so a
04:27couple of
04:27teaspoons of these and this really does add a wee bit of something extra just give those a gentle stir
04:33through just until they disappear into your sauce now obviously we're going to have to add some liquid
04:39to this to you know turn it into a sauce so i'm just going to add some water cold water
04:45warm water it
04:46doesn't matter so i am just using cold water just to cover the beef and then you want to bring
04:52this
04:52up to a boil once it's at the boil turn the heat right down and you want to simmer this
04:58for about an
04:58hour so do come back from time to time just to give it a good stir together to check your
05:04liquid levels
05:04because you may have to add more water you know if too much of your water evaporates but you want
05:10to
05:10make sure that your beef is covered and simmering and cooking well so you just want to keep you know
05:15just keep an eye on it keep simmering away and simmering away until your sauce is lovely and thick
05:22and your beef is lovely and tender mine took about an hour and 15 minutes because my beef is quite
05:28large
05:29and chunky if you use smaller beef it may not take as long but would you look at the shine
05:35off of that
05:36sauce and it's beautifully thick and the flavor was insane and this beef is fall apart tender i'm just
05:44going to show you in a wee second how easily my wooden spoon goes through this beef you know it
05:50just
05:50goes straight through it's like butter yeah just beautiful lovely sauce as well and gorgeous smell
05:58yeah so do give this a go like i said if you do like a nice spicy curry packed with
06:04flavor and would
06:05you look at how tender this is as well so you can serve this with whatever you like we tend
06:11just to
06:12serve curries you know just with some plain rice occasionally we'll have something like a chapati
06:18or a piece of naan bread or even poppadoms or a mango chutney you know it's completely up to you
06:24but we are going to have this for our tea so i'm just going to serve this very plain tonight
06:28with some
06:29basmati rice underneath or you could even add some coriander or lime onto the top of this as well would
06:36also be lovely so pile your plate nice and high like i said this recipe will serve three to four
06:43people i mean this is a very generous portion so if you're having a portion of this size it will
06:48do
06:48about three people or if you're not quite as greedy as we are you will easily get at least four
06:53portions
