Teriyaki tofu donburi is a 20 minute vegan rice bowl recipe that turns crisp tofu, warm rice, and glossy sweet soy sauce into a simple Japanese-style meal. The tofu is usually pressed, cut into cubes or slabs, lightly coated with starch, and pan fried until the edges become golden while the center stays soft. A teriyaki sauce made with soy sauce, mirin, sake or rice vinegar, sugar, garlic, and ginger thickens in the pan and coats each piece with deep umami flavor. Steamed rice catches the extra sauce, while toppings such as green onion, sesame seeds, shredded cabbage, cucumber, avocado, or pickled ginger add freshness and texture. The final bowl is fast, filling, and plant based, making it an easy lunch or dinner with crispy tofu, savory glaze, and comforting rice.

00:00Hey everyone, I'm Yuto and today on Stachi I'm going to show you how to make delicious
00:04Teriyaki Tofu Donburi with all plant-based ingredients. Let's get started.
00:09First we're going to wrap 350 grams of firm tofu with kitchen paper and microwave it for
00:152 minutes at 600 W to evaporate some excess moisture. While we wait for the tofu to cool
00:21down, let's prepare our Teriyaki sauce. Grab a small bowl and add 2 tablespoons of soy sauce,
00:272 tablespoons of mirin, 2 tablespoons of sake, 2 teaspoons of sugar,
00:34and half a tablespoon of garlic paste or grated garlic. Mix it until the garlic is evenly distributed
00:42and then set aside for later. Next heat a pan on medium and add drizzle of oil,
00:48add 50 grams of bell pepper and 50 grams of sliced Japanese leeks or just regular leeks.
00:55You can also add your favourite vegetables here. Keep an eye on them and fry them until they're
01:01slightly charred but while we wait, let's prepare our tofu. Here it is after microwaving. As you can see
01:08it's dried out a bit. I'm just going to cut it into 12 cubes. I recommend cutting large cubes so
01:15that it
01:16has a bigger surface area. Next prepare a container with 3 tablespoons of potato starch, a pinch of some
01:23pepper and give it a mix. We'll be using this to cook our tofu. Okay let's check the vegetables.
01:32These are looking nice and charred so for now I'm just going to transfer them to a plate.
01:38Add a generous amount of oil to the same pan and then when it's nice and hot,
01:44coat each piece of tofu in the starch and place it in the pan. It's important that you put the
01:50tofu
01:50straight in the oil once it's coated otherwise the starch can become wet and gummy. That's why I don't
01:56coat it in advance. As the tofu cooks, turn it occasionally to get an even colour on all sides.
02:04The starch not only makes the outside lightly crispy and nicely coloured but it's also gonna help the
02:10sauce stick better later. Once they're lightly golden all over, I'm gonna add the sauce we prepared
02:17earlier. Keep turning the tofu so that it gets coated all over and then add the vegetables back in.
02:26Continue to cook until the sauce becomes thick and glossy and everything is evenly coated.
02:31When it looks like this, you can take off the heat.
02:36Finally dish up over freshly cooked rice and sprinkle with chopped green onions and sesame seeds.
02:42I also like to add a drizzle of chilli oil for a spicy kick.
02:46And that's it, delicious Terek Tofu Donburi. I'm not vegan myself but I seriously love this dish.
