Maguro zuke don is a Japanese marinated tuna sashimi bowl recipe that turns fresh tuna, warm rice, and savory zuke sauce into a simple but flavorful meal. This dish usually starts with tuna sashimi slices briefly marinated in a mixture of soy sauce, mirin, sake, and sometimes dashi or sesame oil to build deep umami without overpowering the clean fish flavor. The tuna absorbs the sauce just enough to become rich, glossy, and balanced while staying tender. Served over sushi rice or warm steamed rice, the marinated maguro creates a smooth contrast with soft grains and a savory finish. Toppings such as sesame seeds, nori, green onion, shiso, wasabi, egg yolk, or pickled ginger can add aroma and texture. The final maguro zuke don is quick, elegant, and easy to prepare at home for lunch or dinner with fresh tuna flavor and classic Japanese donburi comfort.

00:00If you love tuna sashimi, then you need to try this super easy marinated tuna maguro
00:05zukedon.
00:06Not only is it mouth-watering, but it's extremely simple to make and requires barely any cooking.
00:15We're going to start by making the marinade, so add 3 tablespoons of mirin and 3 tablespoons
00:20of sake to a saucepan and let it boil for a minute.
00:24This is to burn off the alcohol.
00:32Once it's boiled, take it off the heat and add 3 tablespoons of soy sauce.
00:40Leave it to cool completely.
00:42It's winter here, so it only took a few minutes.
00:49Transfer it to a white container and add 3 grams of kombu.
00:58This will add an amazing extra depth and umami.
01:05Then place between 150-200 grams of sashimi grade tuna into the marinade.
01:10It's important that the marinade has completely cooled before you add the tuna, because you
01:15don't want to accidentally cook it.
01:17I'm using a mixture of tuna sashimi end cuts, so that's why they're randomly shaped and
01:23different colours.
01:24The paler pieces are chutoro.
01:26The beauty of this dish is the fact that you can use cheaper cuts of tuna sashimi because
01:32the marinade is going to soften it, flavour it, and make it melt in your mouth.
01:36You can also use any sashimi grade fish or seafood you like.
01:41This marinade will work great with salmon too.
01:44Once all of the pieces are in, cover the surface with plastic wrap.
01:47This will help the marinade spread over the top, even if they're not completely submerged.
01:53Rest them in the refrigerator for about 30 minutes.
01:58I'm going to add some shiso leaves as a refreshing garnish, so cut off the stems, roll them up,
02:13and thinly slice them to get shredded shiso leaves like this.
02:17If you can't get shiso, you can just use chopped green onion instead.
02:21The marinating time is also the perfect time to cook some rice.

02:30Once it's done, place it in a bowl and arrange the marinated tuna on top.
02:47I like to sprinkle some sesame seeds.
02:54Then make a little nest with the shiso leaves so that I can place a raw egg yolk in the
03:00middle.
03:00Of course, this is optional and if you don't like raw egg yolks, you can leave it out.
03:06If you want to add vegetables or something, I suggest serving it with miso soup or a side
03:11salad.
03:12It's just deliciously simple on its own.
03:15I also recommend adding a generous blob of wasabi.
03:18I forgot to add it while I was filming, but it was the first thing I did before I tucked
03:23in.
