In this video, Chef Roscoe shows you how to make Beef Suya, otherwise known as Nigerian Grilled Beef Skewers. Using a from-scratch Suya spice to coat each skewer, the tender beef cuts caramelize to charred perfection over the grill.

00:05blend from scratch. You take your peanuts, your maggi, all your dried spices, including the
00:09Nigerian red pepper. What makes suya different than any other seasoning is using peanut to bind
00:15and toast as a flavor. So when the peanuts are toasted on the grill, get this amazing caramelization
00:20that attaches all the pepper and the salt to it. You want to take the suya mix with some little
00:25bit of oil and brush your skewers the entire time. It'll give you a kiss from the flame next to
