00:08I'm at Hellbender, a Mexican-American restaurant in Ridgewood, Queens. Let's go find the chef.
00:13Okay, I'm gonna send you some of my favorite dishes. Some are things that we have had here
00:17since the beginning, some are things that remind me of home, and some are things you can only
00:20find here on the weekend. I hope you like them. The music is really loud. I feel like dancing.
00:25Here we have four oysters with golden beet mignonette, a tuna tartare with creamy avocado
00:30salsa, cornflakes, and toasted sesame seeds. Wow, that is so delicious. This is actually a special
00:38for tonight, so I guess I'm special. So here we have a beautiful asparagus esquites. It has a chili
00:44glaze, citrus mayo, tortilla cheese, and epazote. This is such a creative take on a classic Mexican
00:50dish. The chef is already off to a great start. Smart break. I don't know if you can tell,
00:56but this is a cheesy dish. It's a three-cheese empanada with cheese on top with a salsa crudo.
01:01Three cheeses? I think, like, that's heaven to me.
01:08If there was a world record for cheese bowl, we just broke it. This is their calamari
01:13a la cuantra with chorizo, ayacote beans, and salsa ranchera. Look at that squid. There's kind of
01:21like a surf and surf thing going on here. Wow, we have an orange creamsicle jello. This is such
01:27an old-school dessert. Chef Yara is bringing jello back. Maybe now I should just have the chef decide for
01:35me wherever I go. You guys actually have to try this. Here you go. Do you love it?
