07:26We are very excited and we're very hungry so, we've set up the dropping board I guess.
07:32What are we cooking up Lulu?
07:33So right now we're gonna start with the sauce, so it's a traditional Vietnamese dipping sauce.
07:39I've never made this sauce before but I've had it in a lot of Vietnamese dishes and it's, love it.
07:44I'll just run you through the ingredients, we've got caster sugar, a chilli, we've got fresh coriander, garlic, lime, some
07:52fish sauce and then we'll pop it all in the jar and give it a shake.
07:56So we're gonna get those ingredients in, I've got a, it's in this esky, I'll grab it out after but
08:01there's a nice coral trout, I'll whack one fillet off and we'll use that for the cook up.
08:06Also, it's called Nook Chum, I believe. I really apologise if I'm getting that wrong.
08:12But yeah, it's a traditional Vietnamese dipping sauce, super popular but we're just eyeing off the measurements because.
08:19Yeah, that's the rule, when you're cooking on the boat there's no measurements.
08:28Got a bit of water warmed up for this too.
08:36We'll do the fresh coriander last.

08:44So I'm just popping the fish sauce in now, there's a couple of ways to do it but I'm going
08:47to start with about two to three tablespoons.
