00:02This omelet has a shaved potato layer that cooks straight in the pan
00:05until it's crispy on the bottom and soft all the way through.
00:08Add pecorino and lots of black pepper into your egg mixture for cachoe pepe flavor
00:12and let the whole thing steam for just a couple minutes until it's set but still soft.
