Mugen cabbage salad is a quick Japanese cabbage recipe that turns crisp cabbage into a savory, crunchy side dish in about fifteen minutes. This dish usually uses shredded or chopped cabbage tossed with seasonings such as sesame oil, soy sauce, salt, garlic, chicken stock powder, tuna, sesame seeds, nori, or chili flakes for extra aroma and umami. The cabbage stays fresh and crisp while the seasoning lightly coats the leaves, making each bite flavorful without needing much cooking. Sesame oil adds richness, nori brings a Japanese-style savory note, and tuna or other toppings can make the salad more filling. The final mugen cabbage is simple, refreshing, and easy to pair with rice, grilled meat, ramen, gyoza, fried chicken, or bento meals, making it a practical side dish with crunch, depth, and fast prepara

00:00If you catch yourself wondering what it would be like if vegetables were just as irresistible
00:05as your favourite snacks, while this mugen cabbage salad with crunchy homemade furikake
00:10might just make that a reality.
00:17You can also find this recipe on my website, along with 400 Japanese recipes.
00:21Just google mugen cabbage space sudachi to find the written recipe.
00:25Aight, let's kick things off with some crispy bacon.
00:28Then, get your frying pan going over medium low heat with a touch of oil.
00:33I'm using one ration for two portions, so let it sizzle away, frying until perfectly
00:38crispy on both sides.
00:39This takes about 8-10 minutes and you'll need to flip it halfway through.
00:44And hey, if you're in a time crunch, skip this step and store-bought bacon bits work
00:49just fine.
00:50In the meantime, let's get started on the rest of the dish.
00:54Grab about a quarter of green cabbage and tear it into large pieces.
01:00Then give them a good rinse under cold water.
01:02I'm using good old green cabbage here, but you can use other types too.
01:06Just keep in mind that thicker leaves might need a bit more steaming time to get tender.
01:15Now you've got two options for steaming.
01:18I'm using the microwave method, so I have my cabbage in a microwave-safe bowl and I'm
01:24adding about 1-2 tablespoons of water.
01:26Cover it up with plastic wrap and microwave it for about 3 minutes at 500 watts.
01:32If you don't have a microwave, you can always steam it instead.
01:36Just boil some water, then pop your cabbage in the steamer basket, then carve it and steam
01:42for 3 minutes.
01:43Next up, let's get all our sauce ingredients together in one bowl.
01:47I'm using 1 tablespoon of toasted sesame oil, 1 teaspoon of chili oil, 1 teaspoon of
01:53chicken bouillon powder, 1 teaspoon of oyster sauce, 1 teaspoon of garlic paste, 1 teaspoon
01:59of salt, and a pinch of freshly ground black pepper.
02:04As always, all ingredients and exact measurements for this recipe can be found in the description
02:08box below.
02:09Once it's done, get your steamed cabbage into the bowl of sauce ingredients, and this
02:15is important, use your hands to mix everything together.
02:18I know it might seem weird, but trust me on this one, hand mixing is absolutely crucial
02:23here.
02:24It's like giving your cabbage a little massage, making sure every single piece gets its
02:29fair share of that delicious coating.
02:32Skip this step and you might end up with some bites that'll knock your socks off with saltiness
02:37while others fall flat.
02:40Once your bacon's hit that perfect crispy stage, take it off the heat and let's move
02:45on to our killer topping.
02:46I'm going to start by crushing 6 unsalted roasted almonds.
02:50They don't need to be too fine, just roughly crushed for added texture.
02:54Place them in a bowl and add 3 tablespoons of meat flakes, 3 tablespoons of crispy fried
03:00onion, and half tablespoon of toasted white sesame seeds.
03:05Now for the fun part, crumble in that crispy bacon and use your hands to gently crush everything
03:11together.
03:12Mugen is a Japanese word for endless or infinite and it's a trend that is totally taking over.
03:17It's not a recipe but this whole movement of creating vegetable dishes that are so ridiculously
03:23good, you literally can't stop eating them.
03:26You know what makes this recipe totally irresistible?
03:28It's all about those amazing contrasts.
03:31You've got the tender steamed cabbage playing off that super crispy topping and this sauce that
03:37just hits all the right notes without being overwhelming.
03:40For the grand finale, arrange your perfectly seasoned cabbage on a plate or in a bowl then go to
03:47town with that amazing frikake topping we just made.
03:52Serve it up while everything is still warm and those toppings are at peak crispiness.
03:58That contrast between the warm tender cabbage and the crunch topping, that's what we're after.
