While Nicole didn’t make this spicy and sweet snack recipe herself, she obviously had to taste test it. In this video, she shows you how to make cowgirl candy with sliced jalapeños, pineapple, and a spiced brown sugar syrup mixture. After cooking the jalapeños with the syrup over the stove, remove the jalapeños and allow the syrup to cool. Add the pepper and pineapple slices to a jar, coat with the syrup, and chill overnight.

00:00Have you ever had cowgirl candy?
00:01Whoa, I did not invent this recipe,
00:04but I was definitely inspired to make it.
00:06So you start out by taking jalapenos,
00:08you can take the seeds out or not, and slice them up.
00:10I'm doing about half-inch slices.
00:12Go in with brown sugar and white sugar,
00:14apple cider vinegar, then salt,
00:16a little turmeric, and garlic powder.
00:17Add in just a pinch of crushed red pepper
00:19and bring this mixture to a boil.
00:20Cook it for five minutes, then add in your jalapenos,
00:23cook those for five minutes,
00:24and use a slotted spoon to get them out.
00:25Then let the syrup cook for another six to eight minutes.
00:28After the sugar mixture has cooked, let it cool completely.
00:31What makes this cowgirl instead of cowboy
00:33is that you add pineapple.
00:34Add the pineapple to the jalapenos,
00:36put everything in the jar,
00:37and then pour the cooled syrup over it.
00:39Seal it tight, give it a little zhuzh,
00:41and pop it in the fridge.
00:42She says the longer it sits, the better it's gonna be.
00:44At least a couple hours.
00:45I'm excited and scared all at the same time.
00:47It's a perfect bite.
00:48Mmm, whoa.
00:49That right there is a party in your mouth.
00:51Woo, it's hot, but it's also sweet.
00:53And then you get that tang from the vinegar.
00:55Not only is this a delicious snack,
00:57you can also chop it up and serve it over cream cheese.
