This week on "Lucie for Hire," Lucie Fink spends a day with the Lindt Master Chocolatier, Ann Czaja, to see if she has what it takes to make her own Lindt chocolate bar. After a series of challenges, Ann puts Lucie to the test. Her final creation blows everybody away!

00:00I'm Lucy Fink, a video producer at Refinery29, but every so often I like to try other people's jobs.
00:07So today I'm in Stratum, New Hampshire at the Lint Chocolate Factory, and I'm going to see if I have
00:11what it takes to make my very own chocolate bar.
00:14This is Lucy for Hire.
00:20Hi Lucy, I'm Anne, it's so nice to meet you.
00:23Nice to meet you, I'm so excited.
00:24So at Lint, we're one of the few companies that still goes from the cocoa bean to the finished product.
00:30We often call it bean-to-bar, and I am absolutely passionate about our premium chocolate.
00:35Let's do it.
00:36All right, let's do it, let's make some chocolate.
00:38The first challenge is to pick your chocolate base.
00:41Did you decide between white, milk, or dark?
00:45100% I'm going to have to go with dark.
00:48Okay.
00:48That's my classic pick.
00:50I think that's a great decision.
00:51Great.
00:51Your next challenge is to pick the inclusions.
00:55Anne walked me through the inclusions that were available in the R&D lab.
00:59There were different types of nuts, dried fruit, salt, and more.
01:03I need to try a cherry.
01:10What do you think?
01:12Between matcha and cherry?
01:13I kind of want to do something that we just don't know.
01:16Okay, something a little avant-garde.
01:18Yeah.
01:18Okay.
01:19I say we push the boundaries of Lint.
01:20Let's do it.
01:21I finally settled on dried cherries, matcha green tea powder, and Bolivian pink salt.
01:26So you can put all of those in there, and then we're going to add some chocolate to it.
01:30I just have to say, this is a lot fewer ingredients than I imagined.
01:35Mm-hmm.
01:37I know.
01:37Because the chocolate is the star.

01:40Before actually making the bars, you need to make a sample batch to taste test it.
01:44So we added the chocolate, mixed everything together, poured it out onto a tray, and then set it in the
01:49fridge to harden.
01:50Set.
01:51Are you ready?
01:54And then we tasted it.
01:57I waited anxiously for Anne's opinion.
02:02I think you did a really good job.
02:04I'm blown away by myself.
02:06I think we can increase the matcha a little bit.
02:08You want to double it?
02:10Let's double it.

02:12All right.
02:12Let's make some bars.
02:13This is delicious.
02:14This really is delicious.
02:16Lucy really surprised me, because I put the ingredients out, kind of hoping she would go in one way,
02:21and she went the other way.
02:22So I'm very curious to see how it turns out, but I have great hopes.
02:27So your next challenge is to create the bars.
02:30All right.
02:31According to your calculations, is this going to be a good bar?
02:34Oh, I think so.
02:34Okay.
02:35I think so.
02:36Just kidding.
02:37We did a lot of math, a lot of measuring, mixed everything together, and finally it was chocolate time.

02:44So we will need 751 grams of chocolate.

02:52And showed me how many grams to pour into each mold, and how to get rid of the air bubbles
02:56for a smooth, chocolatey texture.

03:02Then I put my new knowledge to the test.
03:05Everyone hold your ears.
03:10And after a short wait, the chocolate bars were ready.
03:15Smell pretty good.
03:16I think so.
03:17So, your final challenge will be to package your bars, and then we'll taste test.

03:23I learned how to properly wrap a Lindt chocolate bar by hand, so that it would look perfect when I
03:27shared it with Nico, another Lindt Master Chocolatier.
03:30I wanted to see if he could pull out all of the flavors.

03:40What do you think, taste-wise, what are you getting?
03:44Salt in the front.

03:53And tea at the end, yeah.

04:00I was impressed.
04:01My day at the Lindt Chocolate Factory was magical.
04:05I ate a ton of chocolate, learned how it was made, and even got to bring my new bars home
04:10to share with friends and family.

04:17I'm so impressed, because I really feel that you understand now what Lindt Chocolate is all about,
04:23and why I'm so passionate about it, and that, that you really, you get it.
