02:02Well, it's dessert day, and your technical challenge has been set by the Queen of Puddings, Ravneet Gill.

02:35She sells seashells on the seashore, but the shells she sells are sourced from overseas,
02:39so they're not ecologically viable.

02:45Rav's perfectly piped French meringue will be sandwiched with a raspberry posset and dollop of peach curd and an edible
02:53pearl.
02:54Well, you have one hour in which to make Rav's meringue seashells.

04:54Combining the sugar and egg whites requires patience.
