In this video, learn how to make a marinated cucumber and tomato salad. This savory salad takes sliced cucumbers, onions, and wedges of tomato and tosses them in a homemade marinade. The marinade is made by whisking together apple cider vinegar, extra virgin olive oil, balsamic vinaigrette, salt, and pepper. After tossing the veggies in the marinade, let them rest in the fridge for around two hours. It’s fresh, delicious, and perfect for when you’re rushing out the door!

00:00I'm super ready for summer so I can't wait to make this marinated cucumber and tomato salad.
00:04First thing you're going to do is take four tomatoes and you're going to core them and cut
00:08them into eight wedges each. Then slice about four cups of cucumbers and then you need one
00:14cup of sliced red onion. Then in a large bowl, add some apple cider vinegar, extra virgin olive oil,
00:19balsamic vinaigrette, salt, and pepper. Once your marinade is ready, add your tomato wedges,
00:25your sliced cucumbers, and sliced onion. Then gently toss it all together to coat. Then grab some
00:30plastic wrap and cover the bowl and then put it into the fridge to marinate for at least two hours.
00:35All right, let's try it. Got a little bit of everything on here. I got the tomato, cucumber, onion.
00:44Delicious! This is also just a base recipe. You can customize this dish to any way that you like it.
00:49Add your favorite extra flavors to make it your own. All right, that's it. I'm gonna take my salad and
00:53go.
00:53Bye-bye!
