00:06I'm here at Rosewood Farm in Kangaroo Valley. We're a regenerative farm. We've been here for
00:12about seven years now. First-generation farmers and more recently we've acquired the two cleaver
00:21enclose shops in Wollongong in Gwynville and Port Kembla to try to create a paddock-to-plate
00:27business where we reconnect people to real food. So our passion really was around the health of our
00:35kids when we started. Left Sydney, got into a bit of a research around healthy food, where food comes
00:41from and rekindled an interest I had when I was younger in farming. We've been here on this farm
00:49farming since 2001 and initially we were breeding beef cattle, beef Angus, but as we got to know
00:56the area and I guess some of the interests actually of local caterers and chefs, we now specialise in
01:02retired dairy beef under a brand called Kangaroo Valley Dairy Beef and what we do is we take
01:08the ex-milkers, so the dairy cows when they finish milking from local dairy farmers in the valley and
01:14we rest them here on our farm for three to four months. That allows all of the stress that they
01:20can be under through being milked and providing great milk dairy products. They come here, they let
01:27rest in long grass, they do nothing but eat and relax for that time and all of that great energy
01:34that
01:35was coming out in dairy products comes into the meat and creates a really full flavoured meat product
01:41that kind of differentiates it from younger meat because it has more flavour. More recently we've also been
01:47working with some of the Cleaver & Co beef suppliers around trying to support them and support our
01:55customers by providing consistent supply and so we've actually just bought some a semi-trailer of
02:00cattle from Mile Springs, one of our long-term suppliers who are drying out up near Gunnedah and we've been
02:07able to bring some of his cattle down here onto our farm where we've got enough grass to one help
02:12him
02:13make sure he gets a good price for his cows in a period where they're getting less prices at the
02:20sale yards
02:20but secondly we guarantee the supply for our customers at Cleaver & Co.
