00:07I've spent the last 11 years at Iceberg's Dining Room Bar in Bondi, but for the last 6 or 7
00:12years I've been living on the south coast here,
00:14about 15 minutes outside of Bury and I've just fallen in love with the region and really lucky to be
00:19able to be opening this amazing restaurant as part of Linear's collection on this amazing farm.
00:25So the food here at Saara is basically shaped by the garden. We're aiming to grow about 80% of
00:29the fresh produce all in the garden here.
00:31We've had around 12 months of just playing around with what grows in the region, what doesn't, what varieties we
00:36want to grow and also what we want to commit our time to.
00:39The food here, the ethos behind it is mostly shaped by the garden. I want it to feel like you've
00:43come over to my house and I'm just cooking a beautiful meal for you
00:46and there happens to be someone pouring wine for you and someone taking care of the dishes.
00:50I want it to be really, really homely, beautiful and food people can crave and not locked into one cuisine
00:56and more shaped by the garden and the environment around us.
