This New Orleans-inspired dirty spaghetti will change the game on your go-to weeknight dinner! In this video, Chef John shows you how to make one-pan dirty spaghetti all wrapped up in one pan to make a delicious plate of spaghetti with easy cleanup. This spaghetti’s “dirty” vibe comes from the added ground beef, andouille sausage, and lots of vegetables and seasonings for one of the most delicious pastas you will ever eat.

00:00Hello, this is Chef John from Foodwishes.com with Dirty Spaghetti.
00:08That's right, spaghetti's been too clean for too long.
00:11So I'm going to show you my favorite method for making it dirty, and I mean very dirty.
00:16And to get started, we'll take some ground beef, and we will cook that for a few minutes while crumbling
00:21it up with a spatula,
00:22before we add what's called the Holy Trinity, which is a combination of diced onions, some kind of peppers,
00:29as well as some diced celery, add some cut-up andouille sausage.
00:33Once we have cooked that for a minute or two, we will toss in some onion powder, some garlic powder,
00:39as well as a nice spoon of paprika, also do some ground cumin, followed by some dried herbs,
00:45some cayenne, of course, as well as some kosher salt.
00:48We will transfer in our beef broth, and we will wait for that to come up to a simmer,
00:53at which point we can add our raw spaghetti.
00:55And what we'll do is cover this, and let it cook over medium-high heat for two minutes,
01:00before we uncover it, and give everything a stir, to repeat this process every couple minutes,
01:06for as long as it takes, until our pasta is cooked to our liking.
01:10As soon as our liquids have reduced down, our pasta should be cooked perfectly.

01:18is just a profoundly delicious bowl of pasta.
