00:00So do you know that there are four grades of syrup? This is the top grade, which is grade A
00:05light, also known as fancy or Vermont fancy, and it's made from that earliest, earliest spring sap.
00:12Next is grade A medium, which is a medium amber color. You can see the difference. It really,
00:18there really is a pronounced difference. It has a more pronounced flavor also than grade A light.
00:23Then there's grade A dark, and here you can see, again, a gradation in the tone of the syrups.
00:30This is known as grade A dark amber. It's darker, it's more robust, and it's heartier maple flavor
00:36than the other two syrups. And last but not least, grade B, also known as cooking syrup. This is the
00:44strongest and the darkest of the syrups. If your cake recipe calls for maple syrup, use this dark
00:50grade of maple syrup.
