01:42your grilled halloumi or some sourdough with some salsa verde and smashed avocado while Grantley's guests
01:49are tucking into breakfast outside the grounds crew are starting a day of hard graft we need to
01:57create magic and as soon as the guests arrive to this valley he needs to feel a bit like a
02:02magical
02:02enchanted place across its 38 acre grounds a large lawns ancient woodlands formal gardens and a tranquil
02:14river the gardens at grandly all of course extremely important what we want is that the guests go wow even
02:21before they get into the hotel so as soon as you arrive to the gates you come into paradise we
02:29have a couple
02:30arriving today from America for the wedding so it needs to be perfect striving to meet new news
02:40expectations means gardeners Matt and Alex are starting their day by getting into the thick of a major cleanup
02:47operation clearing the weirs of foliage just another day in paradise this can be countless leaves in the
02:55autumn months they clog up with leaves so it's like a daily job to go and remove all the leaves
02:59from
02:59them but to keep it looking as pristine as possible love the feel of it it's two guys for an
03:06hour a day
03:07every day for our autumn so it's a bit of a time-consuming job that'll do okay one down four
03:13to go
03:13there we go noone wants the weirs to be cleared all the time just so the water falls over the
03:23rocks
03:23perfectly and he's just constantly scanning the area looking for any twigs or leaves taking pictures
03:29sending them back to us oh there's one there can't have that no way he's the man here the
03:39beating heart of Grantley hopefully noone will be happy with the finished result the weirs may
03:44only be ankle-deep but temperatures can be freezing the team works all year round in Yorkshire's great
03:51outdoors yeah looking much better I mean it'll be pleased oh if not we'll be back tomorrow
04:05doing the weirs a bit like the fourth bridge all we're doing basically with how much they're
04:09falling at the minute it's just moving down from one weir and then the next day they get stuck on
04:13the next the next weir and then we move them off that way and the next day they get stuck

04:44the hotel events team are getting ready for a long-awaited visit from Nashville Tennessee so we've got
04:51Trinity and Matt they have booked their wedding in the last couple of months they're from America
04:55I've been to see as a country singer and Matt is in the music industry as well but yeah it's

05:01exciting and can't wait to have them here you know how far away they are they were 15 minutes away
05:08about five minutes ago so I would say any moment now Matt and Trinity have traveled to Grantley just
05:19once before for a menu tasting last month so here we have got the beef Yorkshire fillet caramelized onions
05:27on top and some tomato on there with a diane sauce thank you we spend a lot of time with
05:34our couples
05:34right from the very start of their initial show round how's it taste man delish that potato is very
05:41interesting you know finding out what they like what they don't like and how best we can deliver
05:46that as a team we'd like to think that our couples do leave feeling part of the granny hall family
05:52so
05:52I think we're going to take the caramelized onion off and then do that compound butter on top yeah
05:57the couple's hoping their dreams for a magical celebration with their closest family and friends
06:02are about to come true we were looking at wedding venues and then we saw the pictures of the estate
06:12and I was like he loves history yeah I'm a history buff anything on the history side I want to
06:18go
06:18whenever I come over to the UK it was like this is something that needs to happen because it's just
06:24it's just luxurious meets history and I was like if we could pull this off it would be spectacular
06:35helping to keep the whole looking immaculate throughout is the housekeeping department the
06:40engine room that drives hotel operations led by director of housekeeping Jakob always check inside
06:49inside under the cushions if there is no okay we find the pen today yeah okay okay can you always
06:59move
06:59the curtains on the vacuum behind yeah all right right you go when you finish can you please also dust
07:09here yeah okay all right there are people assigned to public areas there are people assigned to clean
07:17the bedrooms there is a little army of supervisors who will ensure that they achieve the right standards
07:25housekeeping is a demanding role because it's a physical role and at this level needs to be one
07:30percent there's no gray and that's why you know we've just reinvented you know the housekeeping team we
07:36brought in Jakub he has experience he's very pragmatic he's very calm he's very organized but he has a messy
07:44task
07:44the good definition of housekeeping the five-star property is we are invisible and we're working
07:52behind the scenes our checkout time is 11 o'clock check-in is at 3 o'clock so expectation is
08:01that
08:01within four hours entire hotel will be turned around and will be prepared for new guests time pressure is
08:09something what defines housekeeping in any hotel hi marina hi Jacob how long you need to complete
08:17I think 20 minutes thank you I'm trying as quick as I know you always do thank you very much

08:23bedroom requires the completion of more than 150 different itemized tasks so everyone including room
08:30attendant Lorna has a schedule that's bursting at the seams none of us put a duvet in the same way
08:37we're all very do it very differently but equally it would always look the same
08:44when you think of a booking a hotel why do you do that because you need a bed you don't
08:53think about a restaurant
08:54you don't think about the bar you think about the bed and the bed is like wedding dress there is

09:02room for imperfection when I first ever started I struggled to make the beds and somebody that was
09:08training me at the time said to me always remember happy pillows sad pillows so a happy pillow is where
09:17it's all stood up and pointing so it looks nice cheerful and a sad pillow is like that where these
09:27are
09:27all not pointing up so we have to make sure everything is pointing straight and then you have your happy
09:35pillows we've got created for us in different sense for each area of the hotel to complement the area
09:43and its purpose as a housekeeper I were very gentle after shave because I don't want this to stay
09:52behind me when when I finish checking the bedroom again being invisible see one two three with the 3 p

10:03check-in drawing closer and VIP room still to judge once the housekeepers have cleaned them Jakob has to
10:14move quickly through this up I can see which room is done which is in progress which room has departed

10:22it gives me clear picture what's happening on the floors so we still have nine rooms to go and two
10:28hours only before checking and the time is ticking coming up oh my word well just isn't it
10:39can team grantly create a wedding that dreams are made of what is arriving that's it she's on now
10:46and things reach boiling point in the kitchen yeah this is good time this is where everything the
10:51precision and everything needs to be on point down by the river grounds crew Alex and Matt on to their
11:03next job freshening up a suite belonging to some of the hotels resident VIPs very important poultry today
11:13we are doing our weekly job of cleaning the duck house and the rowing boat here at currently hall
11:22the scenic river scale cuts through the estate and as part of it falls under a wildlife protection scheme
11:29the hotel has installed a timber-floating pagoda for the hotel's flock of ducks

11:48that's what we all love about it you just think you've got a normal day lined up and then suddenly
11:53some crazy projects is brewing in the background and needs all hands on decks to complete looking

17:42in the banqueting kitchen sous chef bradley and his team are prepping ingredients for the wedding breakfast

17:55for their main course they've decided to have two dry aged full of beef potato gratin and caramelized
18:00good choice yes wedding food is a really important part of a wedding day we want to make sure that
18:10people have the best weddings that can possibly have meanwhile the couple are being taken to their humble
18:16abode for the next few days the three and a half thousand pound a night presidential suite which combines
18:22an art deco bar and regency revival sofas for history buff matt
18:31along with the luxury of a private dining room emperor size bed and marble clad bathroom
18:39oh my word it's gorgeous isn't it oh my god that's crazy oh my gosh this is so beautiful champagne

19:06the success of tomorrow's wedding doesn't just hinge on team grantly based in nearby leeds florist
19:14sally fletter johnson has a crucial role in proceedings flowers are really important to trinity she
19:21loves flowers she sent me her vision of what she would like for her day which is very clear
19:26white ivories creams the flowers are large-headed hydrangeas they are show-stopping en masse
19:36these are beautiful white roses from ecuador called playa blanca the one of the best roses in the world
19:45they're grown at altitude near the equator and they're just stunning so it needs to all be last
19:52minute they need to be at the optimum condition for that day i do always worry i think i always
19:59will
19:59after 16 years is it all going to go right coming up it's a day out with the boss founder

20:15in search of some show-stopping sculptures for the hotel welcome to the studio oh wow and the stage is
20:24set for a transatlantic wedding to remember it's shortly after dawn on matt and trinity's
20:45big day an early start for florist sally and events operations manager olivia you want to make sure
20:53we've got nice angles going like a small diagonal yeah fabulous okay so that's technically this side
20:58done the aisle is always the first thing that the bride will see when they come into the room it's
21:04their
21:04walkway it's their moment so we need to make sure she's not only got the space she needs to have
21:09a
21:09smooth entrance but also just so it looks perfect while the room is being prepped events manager abby
21:17is making sure the couple are easing into the day i've just been up and seen them um trinity's just
21:23getting her hair done now matt's relaxing he's just been to the spa we've been given everything that
21:27goes on the chairs from bride and groom got a seating plan make sure i'll last in the right area
21:32and then ready to go downstairs the kitchen team's preparing food for 30 diners it is a simpler menu
21:41this one but at the same time if you don't beat the potatoes at the right time or you overcook

21:46fillet slightly it's going to be wrong it's cooking's temperamental i've got about an hour to get these
21:51meds and baits so yeah lots ticket as always florist sally is also hoping everything comes up roses
22:00we have bought in total i'd probably say about a thousand flowers today you don't realize how many
22:06steps you're doing this job i've probably done about 20 000 this morning we treat it like
22:12and work about so when you look down totally symmetrical while the team are creating a room
22:19to remember downstairs upstairs the only thing our bride and groom are interested in making are
22:24memories so matt and trinity are about to do their first look this is going to be the first time

22:31matt sees trinity today so she's already in her dress and we're just going to go catch up now

23:35in lots of ways grantley is endlessly inspiring for hotel founder valeria who has nurtured her creative
23:43streak when the sun's going down and you've got woodland on your doorstep and the trees become black
23:50black and you've got the lovely sunset and i just love doing them i've done quite a few of these
23:56i've
23:57just done a stag actually which is up there i'm self-taught with everything because of my painting i've
24:03got great vision i can visualize it so it's really helped me through the years doing things for buildings
24:09and how it is valeria's put her artistic stamp all over grantly even building a collection of three
24:17dimensional pieces along the way
24:21mum found these sculptures they just fitted in really really well so then we commissioned a few
24:26artists to look at specific bits of artwork and sculpture at the end of the rill
24:32so it became a bit of a focal point the vision was to do more of those in the grounds
24:41last month lifestyle manager paul bolton took valeria on a trip to east yorkshire
24:46to see the work of an artist he thinks might suit the hotel
24:52it's a day out with the boss appearance is everything at grantley hall so the artwork has to be
24:59seen as absolutely high-end yorkshire based sculptor steve winterburn and his son ben
25:07have been working with precious metals for decades
25:13so welcome to the studio oh wow so tell us the journey steve a little family business it's all hand
25:23done and i and it's made in yorkshire the metal comes from your everything is yeah that's why we
25:28keen to collaborate really steve because you you've got the very same ethos as grantley hall really yeah
25:33these are the hairs we started some dance the spring a lot of things we've been doing we've put
25:38turntables on them it's just nice people couldn't touch it and the thing is with bronze you want them
25:43to touch it that's what makes it fun never stop learning do you 100 and we've just done a stag
25:48in
25:48there inside sort of a big stag i like doing big work they are beautiful steps aren't they oh yeah
25:55the new sculptures are intended to be a talking point for guests i paint hairs myself that's all
26:02just golden patina that would be lovely down the corridor i love the color of that finish i get them
26:08on my land okay i get a lot of hairs massive yeah i'm really into wildlife yeah it's been an
26:15inspiring
26:15visit for valeria it's the first time i've been here but it's so exciting for me and we'll have
26:22some of these uh animals that's been done in gold and bronze and everything and they'll be fantastic
26:30but which wildlife creatures will be moving to grantly remains to be seen having them here today
26:36was a dream and it's something ben's always talked about a legacy of families building things like it was
26:42forefathers and generations where the country believed in each other and worked together as
26:47families the new sculptures won't be the only creatures to make a home here at grantly one
27:00four-legged friend has already made herself right at home today's a very special day we're blessed to have
27:08the presence of our resident cats mini on occasion she comes and says hello to our guests originally
27:15astray mini's been officially patrolling the hotel grounds for the past three years mini hello
27:24for her to come here she's in a good mood and um you know i don't know what she's proing
27:29for
27:29but she does whatever she wants she's boss lady absolutely but it hasn't always been this way for
27:37the hall's favorite feline come on then there we go and it's all thanks to gift shop manager shelley
27:46in summer of 23 i noticed a cat behind the shop the cat was minnie but she was very young
27:54there then slowly with the help of licky pouches we made her realize that we were her friends
28:02so she gradually got tamer and tamer that nice now she's waiting at the door every morning for
28:09breakfast and she comes and sleeps in here well done when we first opened we certainly had a zero
28:18tolerance to any pets so when minnie turned up at the shop even i raised my eyebrows went oh is
28:24that
28:24really on brand but we took a gamble on on letting the little mini the cat stay and it's become
28:31part
28:31of the furniture now she's absolutely beautiful beautiful markings and she's a good cat she's well
28:37looked after in the shop they've got a little basket so she's warm she is a hunter that is her
28:44job
28:44that's her official title at grantly hall as well as queen but she likes to go out and prowl around
28:51she knows she's not allowed in the hall itself she will sit outside on the front sometimes and you
28:58get the feeling that going through her mind is one day i'm going to go through that door from humble
29:04beginnings to the hotel high life going out for the day bye bye but there's no time for catnaps for
29:11this grantly staffer when she's on duty have a good day there's only one hitch allowed at today's
29:24wedding would you feel better holding on to the handrail as well yeah because i'm all i'm going on
29:31well you look great there's an hour to go until 30 guests take their seats in the ceremony room
29:39i'm just checking that everything is in place really it's mainly things like the flower petals
29:44on the floor none of them are astray it looks beautiful it is exactly what they wanted i mean
29:49sally has done an amazing job i think she'll be so happy they'll both be happy
29:55the couple have come to take a sneak preview of their dream room in full bloom

30:25it's taken sally and team 47 hours of designing deliberating and delicately arranging hundreds

30:49over in banqueting chef andrew's getting in a spin because the food needs transferring to the kitchen
30:56next to the ceremony room now i'm going to cling to everything it's going to go like this

31:08it's time for meals on wheels grantley style
31:12you've got to really careful this has gone over before
31:18thank you we just had an update on the can of bays they were due to go at um quarter
31:24past two
31:24but they are slightly delayed so they are going to be behind by about half an hour so they're not
31:28going
31:28to a quarter to three now there's plenty to juggle if everything's going to be ready for the 6pm meal
31:36that's it lights on mate lights on
31:40a few meters away the main event is about to go live
31:45so the officiant is going to basically say everyone be up standing for the parents and
31:49grandparents and then that song will play
31:51matt and the couple's nearest and dearest are about to witness trinity being walked down the aisle by her
31:56dad and stepdad
32:02we now welcome the bride
32:27so this is a bit where i say matt and trinity i invite you to join hands but i can

33:24our biggest challenge today is going to be turning the ceremony room into the wedding breakfast room
33:28we're going to have to move all the chairs out build a table in there
33:31pop the cloths all the cutlery everything on there as well the florist will come and then decorate the
33:36table but we do only have an hour and a half to do that so it will be very tight

33:47coming up a little bit nervous i'd like a bit more planning if true to be told
33:52md richard has a surprise in store for mum valeria slow tell him stop stop stop stop stop stop
33:59and will matt and trinity's special day finish with a flourish

34:18lifestyle manager paul is showing hotel founder valeria her new sculptures in situ at grantley
34:25for the first time and sharing the background to each one
34:30this is called game on it's a bronze piece set on uh granite it's beautiful yeah it does then the
34:39second one sport of kings it's gorgeous terrific weight as well they're really really heavy yeah
34:45and obviously completely different finish to the yes it's a nice sort of contrast and then this one
34:51again bronze but this time on a piece of british oak the monarch this one's titled fabulous it's gorgeous
34:59well they're fitting well don't they grantley's newest residents are settling in nicely
35:04but paul's not done yet outside a big statement piece from the same foundry is arriving
35:12that he's hoping will provide a brand new talking point for the gardens
35:17morning guys morning we are installing a horse's head or the front torso of a horse and head we're
35:25putting it here by the riverside bar so a prominent place on the estate we're under the spotlight richard
35:30is joining us as well our managing director so it needs to go smoothly
35:38this piece is worth getting on for a quarter of a million pounds so it's not an insignificant value
35:43it's time to bring on the headline act this is quite nerve-wracking
35:50well while they're concentrating on this then make sure he doesn't forget the car
35:55steering a half tonne sculpture around hundreds of thousands of pounds worth of prestige motors
36:01is a delicate process a little bit nervous i'd like a bit more planning if truth be told
36:11a lot of our team not not as used to handling bits like this just as concerning these guests

38:41we've got medium rare we have got medium well and we've got well done so when it comes to serving
38:46this is the most stressful time of the day when we're getting everything ready
38:50we're going to do meanwhile olivia's crew is also under pressure to transform the formal function
