01:47while grandly's guests are tucking into breakfast outside the grounds crew are starting a day of hard
01:54graft we need to create magic and as soon as the guests arrive to this valley he needs to feel

02:02bit like a magical enchanted place across his 38 acre grounds a large lawns ancient woodlands formal
02:09gardens and a tranquil river the gardens that currently all of course extremely important what we want is

03:03feel of it it's two guys for an hour a day every day for our autumn so it's a bit
03:09of a time-consuming job
03:10that'll do okay one down four to go there we go so it Nuno wants the weirs to be cleared

03:20time just so the water falls over the rocks perfectly and he's just constantly scanning the area looking
03:26for any twigs or leaves taking pictures sending them back to us oh there's one there
03:35kind of that no way he's the man here the beating heart of Grantley hopefully Nuno will be happy with
03:42the finished result the weirs may only be ankle deep but temperatures can be freezing the team works
03:49all year round in Yorkshire's great outdoors yeah looking much better and Nuno will be pleased

04:05doing the weirs a bit like the fourth bridge all we're doing basically with how much they've fallen
04:10at the minute it's just moving down from one weir and then the next day they get stuck on the

04:42job Anna and Abby from the hotel events team are getting ready for a long-awaited visit from Nashville
04:48Tennessee so we've got Trinity and Matt they have booked their wedding in the last couple of months
04:54they're from America Tennessee is a country singer and Matt is in the music industry as well but yeah
05:01it's very exciting and can't wait to have them here you know how far away they are they were 15
05:08minutes away about five minutes ago so I would say any moment now
05:17Matt and Trinity have traveled to Grantley just once before for a menu tasting last month so here
05:24we have got the beef Yorkshire fillet caramelized onions on top and some tomato on there with a
05:29diane sauce thank you we spend a lot of time with our couples right from the very start of their
05:36initial show round how's it stinks delish that potato is very interesting you know finding out
05:43what they like what they don't like and how best we can deliver that as a team we'd like to
05:49think
05:49that our couples do leave feeling part of the granny hall family so I think we're going to take the
05:53caramelized onion off and then do that compound butter on top yeah the couple's hoping their dreams
05:59for a magical celebration with their closest family and friends are about to come true
06:08we were looking at wedding venues and then we saw the pictures of the estate and I was like
06:12he loves history yeah I'm a history buff anything on the history side I want to go whenever I come
06:20over to the UK it was like this is something that needs to happen because it's just it's just luxurious
06:25meets history and I was like if we could pull this off it would be spectacular helping to keep the
06:36hall looking immaculate throughout is the housekeeping department the engine room that drives hotel
06:42operations led by director of housekeeping Jakob always check inside inside under the cushions if
06:52there is no okay we find the pen today yeah okay okay can you always move the curtains on the
07:01vacuum
07:01behind yeah all right thank you right you go when you finish can you please also dust here yeah and
07:11that all right there are people assigned to public areas there are people assigned to clean the bedrooms
07:17there is a little army of supervisors who will ensure that they achieve the right standards housekeeping is
07:26a demanding role because it's a physical role and at this level needs to be one hundred percent there's
07:31no gray and that's why you know we've just reinvented you know the housekeeping team we brought in
07:36Jakob he has experience it's very pragmatic he's very calm he's very organized but he has a messy task
07:44the good definition of housekeeping on the five-star property is we are invisible and we're working
07:52behind the scenes our checkout time is 11 o'clock check-in is at 3 o'clock so expectation is
08:01that
08:01within four hours entire hotel will be turned around and will be prepared for new guests time pressure is

08:49do you do that because you need a bed you don't think about a restaurant you don't think about the
08:56bar you think about the bed and the bed is like wedding dress there is no room for imperfection when
09:04I first ever started I struggled to make the beds and somebody that was training me at the time said
09:10to
09:10me always remember happy pillows sad pillows so a happy pillow is where it's all stood up and pointing
09:19so it looks nice cheerful and a sad pillars like that where these are all not pointing up so we
09:28have to
09:29make sure everything is pointing straight and then you have your happy pillows we've got created for
09:38us different scents for each area of the hotel to complement the area and its purpose as a housekeeper
09:46I were very gentle aftershave because I don't want this to stay behind me when when I finish checking the
09:54bedroom again being invisible you see one two three with the 3 p.m. check-in drawing closer and VIP

23:37grantley is endlessly inspiring for hotel founder valeria
23:41who has nurtured her creative streak
23:44when the sun's going down and you've got woodland on your doorstep
23:48and the trees become black and you've got the lovely sunset
23:52and i just love doing them
23:54and i've done quite a few of these
23:56i've just done a stag actually which is up there
23:59i'm self-taught with everything
24:01because of my painting i've got great vision i can visualize it
24:05so it's really helped me through the years doing things for buildings and houses
24:12valeria's put her artistic stamp all over grantly
24:15even building a collection of three-dimensional pieces along the way
24:21mum found these sculptures they just fitted in really really well
24:25so then we commissioned a few artists to look at specific bits of artwork and sculpture
24:31at the end of the rill
24:32so it became a bit of a focal point
24:34the vision was to do more of those in the grounds
24:40last month lifestyle manager paul bolton took valeria on a trip to east yorkshire
24:46to see the work of an artist he thinks might suit the hotel
24:51it's a day out with the boss
24:55appearance is everything in grantley hall so the artwork has to be seen as absolutely high-end
25:03in the past
25:04yorkshire based sculptor steve winterburn and his son ben
25:07have been working with precious metals for decades
25:13so welcome to the studio

25:18so tell us the journey steve
25:20little family business
25:22it's all hand done
25:23and it's made in yorkshire
25:25the metal comes from everything
25:26yeah that's why we're keen to collaborate really steve
25:29because you've got the very same ethos as grantley hall really

25:33these are the hairs we started some dance the spring
25:36yeah a lot of things we've been doing
25:38we've put turntables on them
25:39it's just nice people can touch it
25:42and the thing is with bronze you want them to touch it
25:43that's what makes it fun

25:46and we've just done a stag in there haven't we
25:48in solid silver a big stag
25:50i like doing big work
25:51they are beautiful stags aren't they

25:54the new sculptures are intended to be a talking point for guests

26:17it's the first time i've been here
26:19but it's so exciting for me
26:21and we'll have some of these animals that's been done in gold and bronze and everything
26:27and they'll be fantastic

26:35having them here today was a dream
26:37and it's something ben's always talked about a legacy of families building things like it was
26:42forefathers and generations but where the country believed in each other and worked together as families
26:56the new sculptures won't be the only creatures to make a home here at grantly one four-legged friend has
27:01already made herself right at home
27:05today's a very special day we're blessed to have the presence of our resident cats minnie
27:10on occasion she comes and says hello to our guests
27:15originally a stray minnie's been officially patrolling the hotel grounds for the past three years
27:24for her to come here she's in a good mood and um you know i don't know what she's probing
27:29for but she does whatever she wants
27:32she's boss lady absolutely
27:35but it hasn't always been this way for the hall's favourite feline
27:39come on then
27:41there we go
27:43and it's all thanks to gift shop manager shelley
27:46in summer of 23 i noticed a cat behind the shop
27:51the cat was minnie but she was very young
27:54there
27:54then slowly with the help of licky pouches we made her realize that we were her friends
28:02so she gradually got tamer and tamer
28:05oh nice
28:06now she's waiting at the door every morning for her breakfast
28:11and she comes and sleeps in here
28:15all gone
28:15when we first opened we certainly had a zero tolerance to any pets
28:20so when minnie turned up at the shop even i raised my eyebrows and went oh is that really on
28:25brand
28:25but we took a gamble on on letting the little mini the cat stay and has become part of the
28:31furniture now
28:31she's absolutely beautiful beautiful markings
28:34and er she's a good cat
28:37she's well looked after in the shop
28:38they've got her little basket so she's warm
28:41she is a hunter
28:42that is her job that's her official title at grantly hall as well as queen
28:47but she likes to go out and prowl around
28:51she knows she's not allowed in the hall itself
28:54she will sit outside on the front sometimes
28:57and you get the feeling that going through her mind is
29:01one day i'm going to go through that door
29:03from humble beginnings
29:05to the hotel high life
29:07going out for the day

29:09but there's no time for cat naps for this grantly staffer when she's on duty

38:45so when it comes to serving this is the most stressful time of the day when we're getting everything ready

40:01my favourite part of the job is seeing the brides and groom so happy
