00:00I think I finally perfected my jalapeno popper smash burger.
00:02And I used the comments on my last one to make this one perfect.
00:06Oh my god, that's so good.
00:08And we're going to start by cooking some diced bacon over medium high heat.
00:11And while you're doing this step, just make sure you keep stirring everything.
00:14You want to make sure that it cooks evenly and the fat has a chance to fully render.
00:16Alright, so the bacon's all done.
00:18We're going to get it out, let it drain, then we've got to get rid of this grease in the
00:20pan.
00:22Now we're going to keep it on medium high heat and I'm going to add some white onion.
00:25We're going to stir this down and let it saute for about three minutes or so.
00:28And that's already smelling really fragrant, so we're going to add the rest of the ingredients, starting with the black
00:32coffee.
00:33And you can really use any kind of black coffee, but I'm going to use espresso.
00:36Then we can add some apple cider vinegar, brown sugar, and my secret ingredient, some fresh raspberries.
00:41Alright, now that we've got all the rest of the ingredients in, we're going to add some salt and pepper,
00:45and we're going to add the bacon in.
00:47And all we have to do is stir it all together.
00:49We're going to drop the heat down to about medium low and let it simmer for 45 to 50 minutes.
00:53And as you can see, after about 45 minutes, the bacon jam is all set.
00:56So we're going to get this off the heat and we're going to move on to making the smash burgers.
00:59Now when I make smash burgers, I always use 75-25 ground beef.
01:02It's going to help keep them nice and juicy, but also give us the best sear.
01:05Then we can take our thinly sliced jalapenos and we're going to place them on top of the patties before
01:08we smash them down.
01:10And don't worry if a few fall off, we're going to place them on top right after.
01:18Now when you go to flip these, just make sure that you carefully scrape up the edges.
01:21That way you can keep that beautiful crust intact.
01:23And even though I normally use American cheese, today I'm going to use Havarti.
01:28Once that's nicely melted, we're going to go ahead and get our burgers off.
01:32And we're going to start by taking the bottom bun and we're going to put a generous amount of whipped
01:35cream cheese on it.
01:37Then we're going to place down two of our jalapeno patties.
01:39And last but not least is our bacon jam.
01:41And we're going to take a good amount of that and spread it right onto the top bun.
01:44Then after we place that on top, we're ready to dive in.
01:47Now don't get me wrong, I love a simple burger.
01:49But if you want to throw simple out the window, this is my favorite burger hands down.
01:52Definitely give it a try.
